ALL IN ONE GROUND BEEF CASSEROLE
1 lb. ground beef
2 baking potatoes
1 can cream of mushroom soup
1 med. onion, chopped
1 can of peas, drained
1 sm. can mushrooms
1 (8 oz.) pkg. grated cheddar cheese
In a 9x13 pan lightly greased, add raw, thinly sliced potatoes. Add onion chopped, then add layer of mushrooms, then layer with can of peas, then add raw ground beef. Mix the cream of mushroom soup with 1/2 can of milk. Pour over the top; cover and bake 2 hours in a 350 degree oven. The last few minutes of baking add grated cheese.

I know dinner's already done with by now ... but .. my favorite for a quick dinner is to get some water boiling in the big "spaghetti pan" and start browning the hamburger. Season the meat with lots and LOTS of pepper...along with some salt.
Once the water's boiling, add 3 or 4 beef boulion cubes (or powdered) Once those have disolved, add noodles. Just the regular egg noodles. (The hard ones, not the frozen stuff)
Once your meat has browned, add about 1/4 cup of flour to the meat and stir it real good. Try and time your meat and noodles to be done at the same time. Drain off SOME water from the noodles so that the water barely covers the top of the noodles..... Add the meat to the noodles & water.
At this point, turn down the heat and announce that dinner will be done soon. By the time they shut off the tv, get their messes picked up, stop wandering around and find the kitchen, it'll be done.

Oh I am going to share my heavenly has recipe with you. Brown the beef, Boil some macaroni al dente, like 2 cups or so. Add to a pot the beef, can of tomato soup, can of cream up mushroom soup and whatever cheese you want usually 8 oz of cheddar does the trick. Mix it all up with the Macaroni. Line a casserole dish with tater tots. Pour macaroni mixture over. Cover and bake at 375ish for 20 min or so.

GROUND BEEF MACARONI AND CHEESE
Brown ground beef with salt and pepper and diced onions.
Boil water and add small elbow macaroni or shells and cook 7 minutes after water boils.
Remove meat and oil from pan (do not clean out)
Add 2 Tbls butter melt and add 2 Tbls flour until it becomes bubbly. Add 1/2 cup milk slowly and stirring as you add.
Cook until thickened and bubbly. Add more milk as necessary to get desired thickness.
Add 1 cup grated cheddar cheese and then add cooked meat.
Serve as is or put in baking dish and top with bread crumbs then broil in oven for 5 minutes until top is browned.

Taco soup. Brown, then Combine with 2 cans kidney beans, a can of corn, a packet of taco seasoning mix, and a can of crushed stewed tomatoes and simmer. Serve wiith curshed tortilla chips and chees.

Beef Enchilada Casserole Recipe
1 pound lean ground beef
1 to 3 teaspoons finely chopped jalapeno pepper
1 1/3 cup chopped onion, divided
1 tablespoon vegetable oil
1 can (8 ounces) tomato juice
1 can (14.5 ounces) diced tomatoes, undrained
1 can (10 ounces) chopped tomatoes with green chiles, undrained
1/2 teaspoon sugar
1/8 teaspoon salt
dash pepper
1 1/2 teaspoons all-purpose flour
1 tablespoon water
4 cups (16 ounces) shredded cheese - mixture of mild Cheddar and Monterey Jack or Mexican blend
1 dozen 6-inch corn tortillas
Cook ground beef in a large skillet until no longer pink, stirring to crumble. Drain and set aside. Sauté jalapeno pepper and 1/3 cup of the chopped onion in hot oil until tender. Add tomato sauce and next 5 ingredients; stir well. Bring to a boil; reduce heat and simmer for 15 minutes, stirring a few times.
Combine flour with water; stir into the tomato mixture. Cook over medium heat, stirring constantly, for about 1 minute, or until thickened.
Combine 3 cups of the shredded cheese with remaining onion; set aside remaining 1 cup of cheese for topping.
Using tongs, dip a tortilla into the hot tomato mixture; sprinkle about 2 tablespoons of ground beef and 1/4 cup of cheese mixture down the center of a tortilla. Roll up jelly roll style and place, seam side down, in a lightly greased 13x9x2-inch baking dish. Repeat with remaining tortillas. Spoon remaining tomato sauce over tortilla rolls; cover pan tightly and bake at 350° for 25 minutes. Uncover and sprinkle with reserved 1 cup cheese and continue to bake beef enchilada casserole, uncovered, for 5 minutes longer, or until cheese melts.
Beef Enchilada Casserole serves 6.

Tacos. Get one of those flavor packet's from the store, some taco shells or tortillas, chop up some vegetables and cheese - wham - your got fun, and yummy finger food.
Or Chili - same ingredients - different flavor packet...

Fry it up and mix it with a can of cream of mushroom soup, add any veggies your little one will eat, mine likes peas. You can thin with a little milk. This makes it like gravy. Serve over noodles or rice. Oh, a little worchestershire is good in it too.
