Does anyone know what is the best oil for frying tortilla chips at home? I've tried vegetable oil but it seems to leave the chips greasy.

its not the type of oil that leaves them greasy, its the `process of cooking and drying them out... first, the temp should be at 365-375 degrees F when you place the chips in, then once you remove them, place on a bakers rack-type grill to drain and season at that point, otherwise dry on paper towels, however if they sit on the soggy paper towels they will get greasy again... i use canola oil, but veg oil is fine

I use Canola oil, but I make sure to place the fried tortilla chips on paper towels to blot the oil.

Canola, better, purer, leaves no flavor. Higher burning level.
