Teflon is highly toxic and falls off the pan after awhile, especially if soaked in water. Aluminum use accumulates in the body, making the body highly toxic, which is hard on the liver.
But stainless steel is safe, non toxic and extremely durable and all around great for almost anything. Sure it isn't non-stick, but a little olive oil will solve that problem and is a good fat for you.

The best pots and pans are 18-10 (amount of chromium and nickel alloy)stainless steel which have an aluminum core for even heat distribution but with the durability and non-reactive properties of stainless steel.
Pure aluminum pans are good heat conductors (heats fast) and light weight but are soft and scratch and are reactive to acids such as lemon and vinegars and tomato. You'll get a metallic taste in your food.
Teflon coated pans are non-stick but are not good for temperatures above 350 degrees as the Teflon starts to bubble off the metal and give off a light smoke that is cancerous and deadly to pet birds and of course humans.
So get a heavy weight stainless steel set of pots and pans as the others have suggested. Oil and regular care makes the surface close to Teflon quality and with the fast heating qualities of aluminum.

teflon is just a coating and can be applied over most other materials such as stainless steel, it is great in preventing foods from sticking and for low-fat cooking... pans are usually made from stainless steel since they are durable and conduct heat well... aluminum is a good heat conductor but it tends to buckle... your best bet is to buy good stainless steel pots and pans for all around use and then perhaps get a few stainless steel pans with teflon coat for cooking fish, eggs etc.... pricier one like all-clad which to me are the best are made with a thick bottom which is an aluminum plate imbedded inside the layers of stainless steel, they provided even heat distribution, do not buckle, are durable and if coated with teflon, dont stick... but they are pricy AND... DONT go for copper, the added benefit of conductivity is minimal for the home user but the maintenance is a nightmare... and they are very expensive

Teflon is a non stick coating, that wears off of the pan, that's why it's called non stick.Some risk to health using old pans.
Aluminium Is cheap and as such is popular.
Good for heat distribution, but is very carcinogenic. badly affected by acids that degrade the metal, these minute particles are then all over the food cooked. Fit only for the garbage bin.
Stainless steel is the safest material but can cost the earth for a good set of pans. 18/12 nickel to chrome this is what surgical instruments are made of hence thee name surgical steel.
Although expensive they are likely to last a life time and as such work out cheaper in the long run.
Steel will clean well, and always looks good.
There are some problems with cooking with single layer pans, look for pans with a thick base, these were developed as a result of the space programme.

Obviously teflon has the benefit of being non-stick so it is great for cooking things like eggs. If you are making something that needs come browning I prefer stainless-steel.

Aluminum and tomato sauce is bad. Some of of the aluminum gets into the food. Tastes bad and is not good for you.
Stainless steel seems good all around.
Teflon, something hexaflouride is nonstick because some of it flakes off into the food. Olive oil seems and feels safer to me. I don't know for sure if teflon is bad for people to eat but it makes me nervous.

Teflon is a coating that comes off when you use utensils to stir, scrape, flip,.....it's been known to cause cancer in some people.
Aluminum is thought to possibly be associated with alzheimers.
Stainless Steel doesn't flake, peel chip...it's not harmful to the body, isn't associated with any diseases, but.....it's not "non-stick"

teflon is non-stick,easier clean up. Stainless keeps heat longer. aluminum heats up faster but can't store food in it.

stainless steel 18/10 the best it is healthy and not cancerogenic but teflon is not sticky but cancerogenic, aluminium cxcuase alsheimic and parcinson diseases
