Chinese rice is long grain rice which isn't really sticky. It's great for making fried rice.
Japanese rice is short grain rice which is sticky. Try Calrose or Shirakiku. You can find them in American grocery stores. I buy my rice at Ralphs.

There are quite a few varieties of sticky rice. Chinese/American version: Calrose rice, steamed with approx. 2-3 Tbl more water than the recommended amount on the package. Vietnamese or Thai version: Jasmine rice. Steam the same way without adding the additional water.
Buy a small bag and experiment with different levels of water and varieties of rice. Have fun!

they actually have a stickier rice than the regular long-grain you get, however, your best bet with long-grain is first, dont rinse it if you want it to clump, and second, get 1 and a half cups of water to a boil for one cup of rice, dump it in, wait til it returns to a boil and then cover airtight and lower heat to a minimum.... do not uncover in the process as this will let steam out... 25 mins later it should be done and pretty clumpy

The clumping comes from steaming the rice.

It's actually a different kind of rice. Unsurprisingly, it's called 'sticky rice' or 'glutinous rice' and is available at any asian grocery store. It's prepared just like regular rice.

Its a special type of rice - actually called sticky rice. While most stores might not carry it, any asian foods store would (we have several in Newport News) and better quality grocery stores with international food sections might have it. Good luck making it!

There's not necessarily a process that they do, it's the type of rice.
I bought Sushi Rice in the Asian section of the supermarket and it works just great, so yummy!
