Cheese is based on milk plus the addition of yeast and bacterias (sometimes called whey). Just like there is cow, goat and sheep cheeses, there could be human cheeses. Even if you used a know style (e.g., blue cheeses) It would have a unique flavor.
Volume is a important requirement for cheese making (you would need contributions from lots women) and lots of experimentation. Is it possible someone has tried this, sure.

Anything that is able to furment long enough, milk wise, youcould make cheese out of it. Unfortunately I dont think that guys would buy it up quick, have you ever tasted breast milk? it is not all that great tasting
