Mexican Cheese Casserole
4 chicken breasts, cooked and cut into
pieces or 2-3 cans boned chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 lg. can evaporated milk
1 can chopped green chilies
1 bag Doritos
Grated cheddar cheese
Crush 1/2 package Doritos and line casserole dish. Combine rest of ingredients and add to Doritos. Sprinkle grated cheese on top and bake at 350° for 30 minutes.
Use remaining Doritos to eat casserole with.
Italian Baked Ziti Casserole
One pound ground meat
One 28 oz. jar prepared spaghetti sauce (or your own homemade sauce)
One 16 oz. package of ziti noodles
Parmesan cheese
Brown hamburger and pour off excess fat.
Cook ziti according to package directions. Drain pasta.
Mix meat, spaghetti sauce and pasta. Place in greased casserole dish and sprinkle with cheese.
Bake in 375 degree oven for twenty minutes or until golden brown on top.
Greek Chicken Casserole Recipe
1-1/2 t. olive oil
1 medium yellow onion, halved and sliced
2 cloves garlic, chopped
1 lb. skinless boneless chicken breast, cut into 6 pieces
1 zucchini, chopped
14-1/2 oz. canned tomatoes, with juice
1 t. dried oregano
2 bay leaves
1 t. kosher salt
1/4 t. freshly ground black pepper
2 oz. Feta cheese, crumbled
Preheat oven to 400°F.
Heat the oil in a Dutch oven or large skillet. Saute onion and garlic for about 5 minutes over medium-high heat until the onion turns golden brown. Add the chicken and stir and cook until all sides turn white. Add the zucchini and cook for 10 minutes.
Pour the juice from the canned tomatoes into the pot. Break up the tomatoes and add them to the pot. Stir in the oregano, bay leaves, salt, and pepper. Simmer, covered, for 10 minutes. Top with Feta and place, uncovered, in the oven for 15 minutes.
Yield: 4 servings.
Summer Spaghetti Salad
16 oz. mozzarella cheese
5 ripe tomatoes, peeled, seeded and coarsely chopped
1 C. fresh basil leaves, coarsely chopped
1 large clove garlic, pressed
2 T. salt
1 T. olive oil
16 oz. thin spaghetti
salt and pepper
Bring a large pot of water to a boil.
Cut the mozzarella into small cubes and set aside in a small bowl. Combine the tomatoes, basil and garlic in another bowl.
When the water is boiling hard, add 2 tablespoons salt and the oil. Add the spaghetti and cook just until it is al dente. Do not overcook. Quickly drain the spaghetti and return it at once to the warm pot. Immediately stir in the mozzarella; the heat of the pasta will melt it slightly. Stir in the contents of the other bowl. Season to taste with salt and pepper. Transfer to a serving bowl and serve at room temperature.
Serves 4 to 6.
Asian Orange Chicken with Cashew Rice
8 cups water
2 bags (2-cup size) boil-in-bag rice
1/2 cup roasted cashews
1 scallion
1 teaspoon hot chili oil, or less to taste
Salt and pepper to taste
Pour the water into a 4-quart saucepan, cover, and bring to a boil over high heat. Add the bags of rice and boil according to the directions on the package.
While the rice cooks, chop the cashews and scallion. Remove the bags from the water and let drain. Cut open the bags and put the rice in the saucepan. Stir in the cashews, scallion, and hot chili oil. Season with salt and pepper. Cover to keep warm.
1 navel orange
3 tablespoons teriyaki sauce
1 teaspoon cornstarch
1 pound chicken tenders
2 tablespoons vegetable oil
5 cups cut-up fresh stir-fry vegetables
2 teaspoons pre-chopped garlic
2 teaspoons pre-minced ginger
Wash the orange and with a grater or lemon zester, remove the zest. Squeeze the juice. In a small bowl, stir together the orange juice, teriyaki sauce, and cornstarch.
Cut the chicken into 1-inch chunks. In a large nonstick skillet, heat 1 tablespoon of the vegetable oil over high heat. Add the chicken and stir-fry for 1 to 2 minutes, or until no longer pink. With a slotted spoon, transfer the chicken to a plate.
Add the remaining 1 tablespoon oil and the vegetables to the skillet. Reduce the heat to medium-high and stir-fry 2 to 4 minutes.
Add the garlic, ginger, and orange zest and stir-fry for 1 minute. Add the chicken and any juices that have accumulated on the plate and the orange juice mixture and cook, stirring constantly, until the sauce thickens slightly and the chicken is cooked through. Remove the skillet from the heat.
Serve over rice.
Makes 4 Servings
Beef and Mushroom Risotto Recipe
1 lb. lean ground beef
1 package (5 1/2 ounces) risotto mix with garden vegetables
1 1/2 C. sliced mushrooms
1 C. chopped red bell pepper
2 cloves garlic crushed
1/2 t. salt
1/4 t. pepper
2 T. grated parmesan cheese
1 T. chopped fresh Basil
Prepare risotto mix according to package directions.
Meanwhile in a large nonstick skillet, brown ground beef, mushrooms, bell pepper and garlic over medium heat 8 - 10 minutes or until beef is no longer pink, breaking beef up into small crumbles.
Pour off drippings. Season with salt and pepper.
Stir risotto into beef mixture. Sprinkle with cheese and basil.

Well you're not really specific about what you want.
Hamburger Helper is always good, the box kind or homemade. For homemade you just brown some ground beef and get a box of ready made mac and cheese and mix together. add seasoning to taste or add parmesan cheese, really tasty.
If you want chicken. You can make chicken and rice. Cut chicken breasts into bite-size pieces and bake chicken until done (no longer pink). Cook regular white rice and buy a jar of heinz chicken gravy and put the chicken on the rice and cover with gravy or you can put the chicken in the pan and put the gravy in it like a sauce and let it simmer and pour the whole thing over rice. It's good either way.

For being quick, & HUGELY VERSATILE, I would suggest buying a pressure cooker. It is a fantastic, fast, and versatile way to cook an absolutely HUGE variety of dishes FAST. For instance; You can prepare a COMPLETE MEAL such as corned beef and cabbage with all the veggies in about 45 minutes or less depending on the weight of the corned beef. It is a great way to cook dishes that would take literally many hours to make any other way. They are relatively inexpensive too and you can get electric/programmable models that automatically turn themselves on & off. When you buy, get a stainless steel one, not an aluminum cooker.

Aluminum Foil can be your best friend for quick meals
Chicken breast, salsa, frozen corn, frozen chopped bell peppers...wrap in foil and bake for 20-24 minutes @ 350...make some rice for a side dish abd salad...
Salmon, sliced lemons, capers, fresh or dried dill, tbsp of butter...wrap in foil and and bake for 10-12 min @ 350...serve with quick side dishes..rice, microwaved baked potato or veggies

Here is an easy recipe and only takes a little while to make....
Instant microwave Rice (cook as instructed)
Chicken:
Take thawed chicken breasts sprinkled with salt and pepper only.
Fry in olive oil and butter until done.
THa's it. Easy and tastes good too.

Brown a 1# of hamburger with some onions. While that browns make a box of Mac and Cheese . Add to the hamb. then throw in a can of enchilada sauce. Easy, Good and fast.

Try this: poached eggs and crisped salt pork cut in strips over a frisee and dandelion green salad with chopped walnuts, honey mustard vinaigrette, croutons, cotija cheese salad served with green leaf tea and mint over ice and crusty bread on the side. Honeydew melon, with pepper and salsa fresca on them, for desert. Then hot tea or coffee.

Tuna caserole! 1 onion, 1 piece of celery, 1 can of cream of mushroom soup, 1 can of tuna and a bag of noddles. Mix it all together and sprinkle crackers or bread crumbs on top and you got a yummy meal.

If you like lamb chops/ribs...
Preheat broiler (500 degs)
Get a rack, seperate each rib, lay them flat on alum foil on a cookie sheet, or something like it.
Place them in the broiler for 6 minutes, take them out. Season with salt and pepper, turn them around, and put them back in the broiler for another 6 minutes.
VOILA!

Your fave. type of pasta - cooked
some veggies diced small - again whatever you have works
if you like meat any type and cut small or diced (cooked)
if you have any fresh herbs like basil, rosemary etc. finally chopped
mix together, drizzle olive oil, some parm. cheese s&p to taste
can be served cold or warm and even my kid likes it
