I am a strict vegitarian (no fish or meat, preferably not eggs or milk either) and need a healthy balanced diet with just a microwave while my kitchen is being done up... I dont want to resort to ready meals, but its ok to include things like microwave rice sashets etc., just not full meals prepared in a plastic box (ew!) thanks!

My daughter's a vegan. She likes to get a bag of baby carrots, mix it with a can of apple juice concentrate, and heat until the carrots are a little soft.

Can't stand the stuff myself, but she likes it.

Ooh look, steak for lunch! ;)

Get used to sub-par meals while living out of a nuke-box.
I myself don't consider a gathering of nutrients a "meal" unless it's accompanied by meat.But even then a meal "nuked" is not a meal.
Try fresh vegetables.Marinate them....vinegar and olive oil are your friends.I'm a big fan of sliced cucumbers and vidalia onions.Throw in a little garlic and cilantro.Feel free to add some freshly ground pepper.Maybe boil some pasta too.
If you don't do dairy.....hmmmm.....some nice whole grain breads fresh from the bakery will go nicely with the veggies.
For protien add some beans.....maybe a nice three bean salad......you do get enough protien don't you?

steamed veggies....You're kinda limited. I hope your kitchen gets fixed soooooon. Look for vegetarian meals in the organic department. They don't taste all that bad. There's a company called Morning Star. Their vegetarian buffalo wings taste awsome!

U know what? Come to think of it, microwaves are really not good to cook foods in. I thought a vegetarian would know that...Just get a portable stove. You can probably get it at walmart or something...The electric kinds you can plug in. We had one and used it when we traveled far by car...

You can't bake in a microwave. You can't fry eggs. You can poach them in a special microwaveable poacher. Or scramble them. Or make an omelet. Thin meats cook up. Veggies steam. All foods can be heated. They have microwave cookbooks. You should get one.
