I'm trying to make the kind with anise and the little sprinkles....

I tried italiancookies.com and they only have cremettis... I wanted the soft anise ones with the sprinkles. italiancookiegifts.com has those. They look yummy. Any other homemade recipies?

Italian Anise Cookies

3 c. flour
3 tsp. baking powder
1/4 tsp. salt
1 c. butter or margarine
3/4 c. sugar
1-3 eggs
1 tsp. each anise and lemon flavoring

Cream butter and sugar. Add dry ingredients. Add one egg at a time until dough can be formed into a ball.

Form dough into small balls.

Place on ungreased cookie sheet. Bake at 350 degrees for 15 minutes.

Frost when cool with a mixture of confectioners' sugar and milk. Sprinkle with colored non-pareils

Many years ago I worked in an Italian restaurant, and the most popular after dinner cookie was the Cannoli. It's a tube cookie, filled with a sweetened Ricotta. Add a little lemon zest, powdered sugar, and even chocolate. YUMMY. Here a recipe that's similar, and then below you can find another I found on the web.
CANNOLI
2 1/2 cups of all-purpose flour
1/2 cup of extra fine sugar
1/4 cup of dry, white wine
Pinch salt
1/4 teaspoon of cinnamon
2 tablespoons of honey
1 egg white

FILLING:
10 ounces of Ricotta cheese
1/2 cup of extra fine granulated sugar
1 teaspoon of vanilla
4 tablespoons of milk
2 tablespoons of chocolate chips

Place flour directly on large board or table. Make a well in the center of the flour; gently fill well with wet ingredients; wine, honey, sugar, salt, whole egg, egg white and cinnamon. Mix texture thoroughly until stiff. Shape into ball, wrap in plastic and chill for two hours. Working with one piece of dough at a time, roll out on lightly floured surface. Roll out thin. Cut dough into 4 inch squares. Wrap each square diagonally around metal or wooden cannoli form and fasten with egg white. Keep dry in oil until golden brown. Fry a few at a time. Cool slightly and remove from forms. Combine and beat together the Ricotta cheese, sugar and vanilla until smooth. Stir in milk. Add chocolate chips. Refrigerate until ready to use. Just before serving, fill cannoli shells with Ricotta filling and sprinkle shells with confectioners sugar. Shells may be stored for up to two months in an air tight, sealed container.

The basic of basic for Italian cookies is this recipe:

Basic Italian Cookie:

INGREDIENTS:
5 cups (500 g) flour
1 1/2 cups (150 g) sifted confectioners sugar
2 tablespoons baking powder
1 cup shortening (butter or whatever)
3 eggs
1 tablespoon vanilla, or you can add any flavoring you would like.

PREPARATION:
Sift flour and measure. Resift with sugar and baking powder into bowl. Cut in shortening until it looks like coarse cornmeal. I do this by hand because the dough is heavy for a mixer. Make a center in the flour, and add the eggs, and vanilla, mix and knead the dough well for about 5 minutes until smooth, adding a little more flour if it seems to soft and sticky.

Pinch off bits of the dough about the size of a small apricot, and form into desired shape. Place on greased cookie sheet 1 inch apart, and bake in hot 450 oven for 10 minutes until light golden brown. Watch carefully because they will burn easily. Makes 4 dozen cookies.

The frosting is made with egg whites.

At least 4 eggs whites just beaten until foamy, then add confectioners sugar, until you get a runny type of frosting, I would say like pancake batter, then add whatever flavors you want. I usually add anise oil, just a drop or two, You can also color this frosting. At Easter I color mine blue, green, pink, and white. Once the cookies are cold, toss them in the frosting, and set aside, it will form a hard surface on the cookie once dried.

One word of caution, never make this frosting if it is the lease bit damp outdoors, or in too hot of a kitchen. It just won't harden on the cookie. While the frosting is still damp you can add the colored sprinkle candy on them.

This basic dough also can be used to make sesame cookies: shape into fingers, and before baking dip in milk and then the sesame seeds. Bake as above.
