Top with minced shallots, a splash of white wine, a squeeze of lemon, s&p and bake in hot oven for 5 minutes, pull out the salmon and top with some honey and bake 5 minutes longer. The slamon is seasoned and has a sweet crispy top.

Easy Pesto Salmon:
2 cups fresh spinach leaves
1/2 cup basil leaves
1/4 cup fat-free, less-sodium chicken broth
1 tablespoon olive oil
1/4 teaspoon salt
3 garlic cloves, peeled
Cooking spray
2 (6-ounce) salmon fillets, skinned
2/3 cup hot cooked brown rice
Preheat oven to 400°.
Place the first 6 ingredients in a food processor or blender, and process until smooth. Spoon 3 tablespoons pesto into bottom of an 8-inch square baking dish coated with cooking spray. Top with the salmon fillets, and spread with the remaining pesto.
Bake at 400° for 20 minutes or until fish flakes easily when tested with a fork. Serve with rice.
Yield: 2 servings (serving size: 1 salmon fillet and 1/3 cup rice)

preheat oven to 500 degrees. Slice an onion and arrange slices in a baking dish; top with a few sprigs of rosemary (or another favorite fresh herb, or none at all is OK as well); place salmon skin side down on top of rosemary and onions, sprinkle with coarse salt. Roast for twenty minutes. I still can't believe how easy this is, and how nicely the fish turns out.

Soak a skinned filet in maple syrup then grill it. The best way to grill is to buy a grilling cage. Salmon tends to flake apart. If you put it in a foil boat, the outside won't cook the desired way.
Cooking in a grilling cage will hold the salmon together, allow you to flip it while cooking directly over the heat.
Also add a couple wet wood chips to the coals. It adds that smokey flavor as in Plank Salmon

Salmon, Poached in White Wine w/Orange Slices (P, KLP, TNT)
Serves: 2
2 fillets of salmon, approximately 3/4 pound each
4 cloves of garlic, chopped fine
1/2 onion, diced
1/2 cup white cooking wine
1/2 cup water
1 orange with peel, sliced thin, approximately 7 slices
2 tbsp. margarine
2 fresh basil leaves, torn or 1 tsp. dry basil
Salt, to taste
Pepper, to taste
Pinch or two of dry dill
Before beginning, generously pour some olive oil into a baking dish or large disposable foil pan. Add the wine and water. Wash the salmon fillets, pat dry with paper towel. Set the salmon in the liquids and marinate for approximately 1 hour, turning every so often.
In large skillet, melt the margarine, sauté the onions slightly, until translucent. Add garlic and sauté for only 1 minute, stirring frequently. Add the basil, salt and pepper.
Add the skillet mixture to the liquids and salmon and baste all together. Layer the orange slices over the salmon and sprinkle a small amount of dill on top. Cover with foil. Bake in 375° oven for approximately 15 to 20 minutes.
Serve over rice or with side of pasta.
Poster's Notes:
For the garlic, you can use less, depending on your taste buds.

Salmon Casserole
3 cans boneless salmon, drained
1 lg. can Chicken Noodle Soup
(family-size)
18 saltine crackers, crumbled
1/2 C. Italian bread crumbs
1/2 C. milk
2 eggs
1 lg. bottle, pimento, drained
1 T. basil
1 T. butter
Combine ingredients in large Corningware or Pyrex bowl. Top with 3 butter slices.
BAKE uncovered at 400º for 35 minutes (OR microwave, covered with wax paper, for 20 minutes).

Easiest for me is...
rinse the salmon and pat dry. rub in small amount of Extra Virgin Olive Oil (Or regular Olive Oil), lightly salt. Cover with brown sugar and drizzle with honey. Put under broiler for 15-20 minutes or until brown sugar is bubbly. Yummy.

Brush the top of the salmon with Dijon mustard. Sprinkle with Italian bread crumbs, and drizzle butter on the top. Bake for 15 minutes. You'll love it!

Herb Crusted Salmon Filet w/ lime-cilantro butter
Herb Crust:
1/2 cup chopped basil
1/2 cup chopped cilantro
1/2 cup chopped nuts (i prefer pine nuts but walnuts work good too)
1T fine chopped garlic
3-4 TB olive oil
Combine all ingredients, salt and pepper to taste.
Lime-cilantro butter:
4 T unsalted butter (room temp)
1 T lime juice
1T fine chopped cilantro
1 tsp. lime zest
Combine all ingredients, salt and pepper to taste
Take filets, skin side down and apply Crust ingredients evenly on flesh side, I usually make crust about 1/8 of an inch thick. On stove top in a oven friendly saute pan brown the filets herb side down over med-high heat using butter or better yet clarified butter. Carefully flip filets over, skin side down. Pop in oven and bake for approx. 7 minutes for med results. Longer or shorter for desired temp. Plate filets and serve with dollop of Lime butter on top.
Salmon Filet with Miso Ginger Sauce
Serves 4
4 Salmon Filets 6oz each
2 Tbs. Rice wine vinegar
1/2 cup Honey
1 tsp. Mustard powder
2 Tbs Red Miso Past
2 Tbs Soy Sauce
1 Tbs. Brown sugar
1 tsp Ginger root, grated
3 Green onions , sliced
Method:
For sauce blend all ingredients until smooth.
Sear salmon on flat top, Brush with sauce and roast in oven at 300 degrees for 15 minutes.

*different kinds of beans
*thinly sliced red peppers and onions
*chopped anchovy
*mint leaves
*basil leaves
*coriander
*seasoning and lemon juice
*chilli
and serve them together! it's SO YUMMY!
