I took two frozen salmon steaks out of the freezer on Sunday Aug. 6 and immediately put them in the fridge to defrost. I'd like to cook them for dinner tonight (Thursday, Aug. 10). Is this safe, or salmonella?

It's risky. First touch the salmon, if it is very slimy, then it's not edible. If it has a VERY fishy odor...it's not edible. Better safe than sorry...the old saying goes "when in doubt, throw it out".
Good luck...it's a shame if you have to toss them out. Salmon is my favorite!

If you're going to cook them, and they went straight from the freezer to the fridge I'd say they're safe. I think the packaging says to eat them within 48 hours, but that's to be way sure the company doesn't get sued. Most best by dates and times are passed while the food is still in good condition. My salmon wasn't even fully melted by the second day in the fridge.

No meat/fish should stay in the fridge for more than 5 days.

First, smell them. If they smell "off condition" then dump them. The same if they feel slimy or tacky, Dump them. Otherwise the are probably o.k. But you are pushing the envelope by about 3 days
