Well - you could make a herring salad out of it. Slice some mild onion thinly, cut the herring in bite sized pieces and toss it all with some red wine vinegar and pepper. You won't need salt. Let it marinate in the fridge for a day or so. That's really good. You eat it with a good rustic bread.

Salted Herring is raw, not smoked. Just gutted, salted and frozen.
Just eat it. Like that with some diced raw union .
Also very nice with sliced or diced beet in yogurt. Sounds strange but very delicious.

you can preserve it in a jar . . a layer of herring, chopped scallions and black olives, a bit of olive oil and fresh pepper, then another layer of herring, scallions olives, and again, olive oil and pepper, and again layers until the jar is full . . refrigerate for a day or two and eat with cottage cheese on bread, or just like that, with a toothpick, it's quite delicious, and very very unique!!!
