Put a bowl of water in the oven with the loaf - the steam will help keep the crust moist while the inside cooks and then take out the water once you want to brown the crust a bit

I place a little dish of water on the floor of the oven and pre-heat for about 10 mins at 180°C, then I bake it for about 30 mins, I take a peek to see if the crust is the colour I want it be. I cook my bread in cake moulds, it's easier to cut the loaves and it's easier to cook the dough if it's too soft (on rainy days).

Your oven is too hot. Try reducing the stated temperature by about 15 degrees and cook for another 10 minutes.

Reduce the temperature of the oven. A perfect bread will sound hollow when you tap it on the bottom.

You need to lower the cook temp. every location is different and you need to find the right temp for where you are. If the outside is cooking to fast this will help you try lowering it 20 degrees at a time hope this helps

do you grease your pans all the way up? Sometimes that burns, but first check the temp of your oven.
