Can you give us more details? There usually has to be a complaint filed by a neighbor or someone for the county to want to inspect something, I believe. Anyway don't ever talk with the county over the phone nor admit anything. Tell them they must put everything in writing to you. Start a "paper trail." Also, try putting up a fence around your property to keep them out. I believe they may need a warrant. Try just ignoring them, maybe they'll leave you alone.

Only with a warrant or for "county business" like checking easements or power lines. You do have the right to insist that you are present when they enter your property since you are responsible if something happens to that county worker on your property.

Several ways 1)if you have no privacy fence they can just look at what is out in the open.
2) if you have a chain link fence what ever they can see without coming on the property.
3) if you have privacy fence only areas out side of the fence.
4) with a search warrant they can look wherever they want

No you can not refuse the county. They can even come inside & check how many bathrooms you have for property tax purposes.

You need not admit them to the yard unless (a) they have a valid warrant, or (b) there is an easement (as for power lines) that permits access.

Generally, the county has easement rights around most properties that allows them to do as they please. This is so that they can install or repair utility lines.

YOUR A HOME OWNER NOT A LAND OWNER. THE COUNTY USUALLY DOES WHAT THEY WANT. IF YOU DON'T WANT THEM TO, SLOW THEM DOWN IN COURT.
