Parmesan covered salmon on a bed of wild rice with steamed veggies on the side. Red wine to drink and yummy Chocolate Godiva Cheesecake for dessert!!!! Damn that sounds good!!

"My fave from when I was a kid and [my husband] loves it now:

Tamale Pie

1 onion chopped
1 green pepper chopped
1 lb ground beef (turkey or something else that's ground)
1-2 tablespoons chili powder
1 14 oz can crushed tomatoes
1 cup corn meal
3 cups chicken broth
1/2 cup cheese
salt to taste
Brown the meat and add the onion then the pepper. Fry a bit, then add the chili powder. Dump in the tomatoes and let cook.

Mean while, bring your chicken broth to boil in a seperate pan and slowly add the corn meal as to not get it lumpy. Cook until thickened.

Then, get out a casserole dish, grease it. Take 1/2 of the corn meal goo and put it on the bottom. Then goes the meat mixture. Then top off with the rest of the corn meal mixture and cheese. Back for about 1/2 an hour in a 350 degree oven.

Try this

Macaroni Grill's Penne Rustica

Gratinata Sauce
2 tbls butter
2 tbls chopped garlic
1 tbl dijon mustard
1 tsp salt
1 tsp chopped rosemary
1 cup marsala wine
1/4 tsp cayenne pepper
8 cups heavy cream

Penne Rustica
1 oz. pancetta or bacon cut into 1 inch pieces
18 shrimp peeled and deveined
12 oz. grilled chicken breast sliced
4 1/2 cups of above sauce
large bag precooked penne pasta
3 tbls pimentos
6 oz butter
1 tbl chopped shallots
1 pinch salt
1 pinch fresh ground pepper
1 cup shredded parmesan cheese
1/2 tsp paprika

For the gratinata sauce: saute butter, garlic and rosemary until garlic begins to brown. Add marsala wine and reduce by 1/3. Add remaining ingredients and reduce by half of original volume. Set aside.

For the Penne Rustica: Saute pancetta or bacon until it begins to brown. Add butter, shallots and shrimp. Cook until shrimp are evenly pink but still translucent. Add chicken, salt, pepper and mix thoroughly. Add Gratinata sauce and 1/2 cup of parmesan cheese and simmer until sauce thickens.

In large bowl, combine shrimp and chicken mixture with precooked pasta. Place this mixture in a large casserole dish. Top with remaining cheese and pimentos and sprinkle with paprika.

Bake at 475 for 10-15 minutes

Vegitarian stuffed bell peppers sound nice to me ; boil rice, boca fake ground meat, tomatoe sauce, fresh garlic........yummmmmy!
