Low-Fat Carrot Cake Muffins (That Don't Taste Low-Fat!) 12 muffins 35 min 15 min prep 1 1/2 cups whole-wheat flour (or use half white and whole wheat) 1 teaspoon baking soda 1 teaspoon baking powder 1 1/2 teaspoons cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ginger 1/2 cup brown sugar (can use more or less) 1 egg, slightly beaten 3 tablespoons oil 2 teaspoons vanilla 1/2 cup low-fat milk 1 (8 ounce) can crushed pineapple, well drained 1 1/2 cups grated carrots (squeeze out some of the moisture with hands) 1/2 cup raisins 1/4 cup chopped walnuts Set oven to 350 degrees. Line 12 muffin tins with paper liners or spray tins with non-stick cooking spray. In a large bowl mix together first 7 ingredients. In a small bowl whisk together egg, oil, milk and vanilla. In a medium bowl mix the shredded carrots with the crushed pineapple. Add in the oil/egg mixture into the carrot/pineapple mixture; mix well to combine, then add to the dry ingredients; mix JUST until combined. Add in the raisins and chopped nuts. Divide the mixture between the 12 muffin tins. Bake for about 20-25 minutes, or until the muffins test done.

oh yeah, I'm trying to lose weight myself and I love baking sweet stuff!
No-Guilt oatmeal raisin cookies:
1 1/2 cup flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 egg (or 2 egg whites for no-cholestral)
3/4 cup sugar
1/2 cup oil
1 Tbs molasses (optional)
1/4 cup skim milk
1 3/4 cup oatmeal
1/2 raisins
1/2 chopped walnuts (optional)
Preheat oven to 350 degrees. Sift together flour, baking soda and salt. Stir in remaining ingredients. Drop by the rounded tablespoonful onto an ungreases cookie sheet. Bake for 10-11 minutes.

This is my favorite low fat dessert:
INGREDIENTS:
1 (5 ounce) package instant low fat vanilla pudding mix
3 cups cold low fat milk
1 (9 inch) angel food cake, cut in cubes
4 bananas, sliced
1 (16 ounce) package frozen strawberries, thawed
1 (12 ounce) container frozen low fat whipped topping, thawed
--------------------------------------------------------------------------------
DIRECTIONS:
Prepare pudding with low fat milk according to package directions. In a trifle bowl or other glass serving dish, layer half the cake pieces, half the pudding, half the bananas, half the strawberries and half the low fat whipped topping. Repeat layers. Cover and chill in refrigerator 4 hours before serving.
Yum, enjoy.
