I am making stuffed chicken breast for dinner, the stuffing recipe calls for thawed spinach, crumbled bacon and cheese. My question is what seasonings can I put in the spinach itself before I stuff the chicken since I have always found frozen spinach particularly bland?

Also, I have already made macaroni and cheese to serve with it. Do you think that will be too much cheese with that as well as the cheese in the chicken? Should I omit the cheese from the stuffing mixture?

Use freshly minced garlic. Yummy!

Personally I like a bit of thyme and Jane's crazy mixed up salt, also known as Mrs. Dash... Any spice would go good with that so long as it wasn't too much of a citrus taste....you want seasonings that go well with a robust meat flavor since you have the bacon and obviously the chicken. A bit of garlic poweder might be nice. Wish I could help you but when I'm in the kitchen I just throw a bunch of stuff together from what I have, I cook off the top of my head and thats only because I was taught by a guy from Italy how to cook, very rarely do they use recipies. I'm thinking the bacon and cheese will flavor it up nicely, as well as the juice frm the cooking chicken.

But you could add a bit of salt, and mabe a clove of crushed garlic before stuffing the chicken.

Apple-Bacon Stuffed Chicken Breasts:

Runner-up

2 bacon slices, diced
1/2 cup peeled, chopped Granny Smith apple
1/2 cup dried cranberries, divided
1 tablespoon fine, dry breadcrumbs
1/2 teaspoon poultry seasoning
1/2 teaspoon ground cinnamon
4 skinned and boned chicken breast halves
2 tablespoons butter or margarine
1 cup apple juice
2 tablespoons apple brandy or apple juice
1/4 teaspoon salt
2 teaspoons cornstarch
1 tablespoon water
1/4 cup coarsely chopped pecans
2 tablespoons chopped fresh parsley

Cook bacon in a large skillet over medium heat until crisp; remove bacon, reserving 1 tablespoon drippings in skillet.

Sauté chopped apple in reserved drippings over medium-high heat 4 minutes. Remove from heat; stir in bacon, 1/4 cup cranberries, and next 3 ingredients.

Cut a 3 1/2-inch-long horizontal slit through the thickest portion of each chicken breast, cutting to, but not through, other side, forming a pocket. Stuff apple mixture evenly into each pocket. Wipe skillet clean.

Melt butter in skillet over medium heat. Add chicken, and cook 8 to 10 minutes on each side or until done. Remove chicken, and keep warm.

Add remaining 1/4 cup cranberries, apple juice, apple brandy, and salt to skillet. Stir together cornstarch and 1 tablespoon water until smooth; stir into juice mixture, and cook, stirring constantly, 1 minute or until thickened. Spoon over chicken, and sprinkle with pecans and parsley.

Yield: 4 servings

i have made the same recipe using ricotta cheese, fresh grated parmesean cheese, and 2 cloves garlic minced, coarse salt and ground black pepper..... yum yum ( also stuffed pork chops with the same stuffing )

first of all make sure you squeeze all the water out of your spinach. this takes a while to do. it completely needs to be dry. season with a little chopped egg, garlic powder, a little salt and white pepper!

How about a little of Emeril's "Essence?" That stuff seems to make everything taste better-just be careful at how much you use, may be al ittle salty to some tastes.

Fresh garlic and some fresh ground black pepper. Maybe a little bit of olive oil. : )

try McCormick's Garlic Pepper....I used that stuff for everything...it is yummy
