I'd prefer to have recipes that you've actually tried yourself... I can look one up online any day, but I'd like to know I'm trying something that my peers have successfully prepared and ENJOYED.

Super Squash This is my mom's recipe

* 2 tablespoons butter
* 3 pounds yellow squash, chopped
* 2 onions, chopped
* 1 cup shredded sharp Cheddar cheese
* 1 cup mayonnaise
* 3 eggs, beaten
* 12 saltine crackers, crushed
* 1 (1 ounce) package dry Ranch-style dressing mix
* 1 teaspoon salt
* 2 cups dry bread stuffing mix
* 1/2 cup melted butter

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).
2. Melt 2 tablespoons butter in a large saucepan over medium-high heat. Cook squash and onions until tender. Remove from heat, and stir in Cheddar cheese, mayonnaise, eggs, and crackers. Season with Ranch dressing mix and salt.
3. Spread the squash mixture into a medium baking dish. Mix together stuffing and 1/2 cup melted butter, and sprinkle over the squash mixture.
4. Bake 20 to 30 minutes in the preheated oven, or until firm and lightly browned.

Squash Stir Fry:
Cut up some summer squash, zuccini, onion, and porobella mushrooms in a large bowl. Add about 1/4 c white wine, a 3 T of lemon juice, and about 1-2 T of italian seasoning. Toss to coat. Saute in pan for about 5-10 minutes, depending on how you like your veggies cooked.

A variation: Add cut up steak or chicken (brown the meat first) to the mix and spread evenly in a baking pan. Top with crumbled feta cheese and then broil about 10 minutes until the veggies are done and the cheese is nice and browned.

Stuffed Summer Squash

1 x Summer squash
1 x Yellow cheese, diced fine
1 x Cream or milk
1 x Salt & pepper
1 x Bread crumbs, fine
1 x Butter


Instructions

Depending on size of squash, allow 1/2 per person. Parboil whole squash in salted water until tender. Remove, slice in half lengthwise. Scoop out center of squash and place in bowl an equal amount of finely diced yellow cheese. Add a little cream or milk, salt & pepper lightly, and return to squash shell. Top with fine bread crumbs, dot with butter, and bake until cheese is melted.

Squash
Tomatoes
hamburger meat
velveta cheese

Cut the squash in round circles, about a 1/2 in thick. Cut tomatoes in wedges, then cut the wedges in half.

Put the squash and the tomatoes in a bowl and set aside.

Brown hamburger meat and season to your liking. Once the meat is brown drain thoroughly

Put the squash and the tomatoes in a large pot, medium heat, do not add water, squash is high in water and it will be mushy if you add more. Once the squash and tomatoes start to get soft, add the hamburger meat, low heat. Stir very sparingly as you will cause the squash to become mush, just enough to keep it from stickin. When the squash and tomatoe is almost completely soft, take off the flame and add cubed velveta cheese, stir only enought to get the cheese down into it. cover and let sit until cheese is melted. Enjoy it tastes bomb.

Simple Chicken and Summer Squash

Ingredients:

4 medium chicken breasts, washed and patted dry
1 tblsp flour
1/4 tsp salt
1/4 tsp pepper
1/2 tsp olive oil
2 large or 4 small crook-neck squash
2 large zucchini
2 cups chicken stock
1 tbs herbes de provence
Directions:

Heat Oven to 400 degrees Mix flour, salt and pepper. Dredge each chicken breast lightly. Slice squash on the diagonal, 1/4 inch thick. Sear slices (just brown) on both sides on med-high heat in a heavy saucepan. Set aside. Heat olive oil in a heavy saucepan. Brown chicken breasts on both sides, then remove to a glass baking dish. Set aside. Layer squash slices over chicken in baking dish. Sprinkle herbes de provence evenly over chicken and squash. Pour chicken stock over ingredients. The stock should cover the chicken completely, but not the squash. Squash will steam through as the chicken broils. Cover with glass lid and bake for 20 to 25 minutes at 400 degrees.

Summer Squash Stir-fry
2 tablespoon olive oil
2 medium zucchini, sliced
2 medium yellow squash, sliced
1 medium onion, chopped
1 clove garlic, crushed
1 large ripe tomato, peeled and chopped
1 tablespoon chopped fresh parsley
1 tablespoon Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon salt
Preheat a large skillet or wok for about 1 minute at medium heat, then add olive oil and continue to heat for 1 minute. Add the zucchini and yellow squash, onion and garlic, and stir-fry for 2 minutes.
Add the remaining ingredients and reduce heat to simmer. Stirring occasionally, simmer 3 or 4 minutes or until vegetables are cooked, but not limp.


Stuffed Summer Squash

INGREDIENTS:
4 to 6 medium yellow squash
4 ounces fresh sausage
1 medium onion, chopped
salt and pepper, to taste
2 slices fresh bread, crumbled
seasoned salt, to taste
PREPARATION:
Boil squash whole until just tender; remove and carefully split lengthwise. Using a spoon, scoop out pulp, taking care not to break shells. Set pulp aside. Place squash shells in a baking dish.
In skillet over medium-high heat, cook sausage with onion.

Add salt and pepper to taste; remove from heat. Add squash pulp, bread crumbs, and seasoned salt. Add a little water if the mixture is too dry.
Stuff squash shells with the sausage mixture; bake at 375° until browned

Fried Summer Squash
.
INGREDIENTS:
4 eggs, beaten
3/4 cup milk
1 1/4 teaspoons salt
7 medium summer squash, thinly sliced
2 1/2 cups flour
oil
PREPARATION:
Combine eggs, milk, and salt. Dip squash in the egg batter, then roll in flour until well coated. Fry in deep hot fat, about 360°, until golden brown.

slice and fry in butter,it's definately quick and easy and for zuchini slice lengthwise butter the inside part with a butter knife and sprinkle with parmesan cheese then broil for about 20 minutes,this is a favorite of my young people

clean it out cut it up and wash it. wrap it in foil with a little butter salt and pepper or with brown sugar. Bake until tender. I don't eat it but my family loves it. I only like it raw. they say yum yum
