Yes, you can i'm living proof. I have had mine out for 10 years now and i haven't had any problems. Sometimes things happen and you need to get it taken out.

The body has an amazing ability to cope to all types of situations. Humans also have extensive "backup" systems in place that can take over if another system fails.
Here is a list of organs we can live without, with almost no complications: In fact you'd never even miss em'.

spleen
1 kidney
1 lung (may depend on age and functional capacity of remaining lung)
1/3 of intestines (can live without more, but increases complications)
1/3 - 2/3 of liver
gall bladder
appendix

also you could live without any hormone producing organ, but you would obviosuly need hormone replacement therapy and that could have extensive complications. (for example: pancreas, thyroid gland, ovaries, testis, adrenal gland, etc.)

Yes. You can pretty easily. A little while afterwords certain foods (like fast food type) might give you the need for a quick trip to the bathroom but your body will adjust

she'll be in basic terms superb. i had mine bumped off in 2009. different than for some digestive/ibs probs i save on with a low fat dairy loose nutrition regimen which extremely enables me. To be loose from that soreness is stunning!!!. wish she gets on ok and recovers properly. :)

Yes, everyday someone has their gallbladder removed. My dad had his removed 8 years ago and is still doing fine.

Yes...it is not needed, it has some functions but you can live without it.
