CREAMY CREAM PUFFS
CREAM PUFF SHELL:
1 c. water
1/2 c. butter
1 c. flour
4 eggs
FILLING:
2 (3 1/2 oz.) boxes of vanilla instant pudding
1 c. milk
2 c. heavy whipping cream
Mix heavy whipping cream on low speed for one minute, then on high speed for 2 minutes.
Preheat oven to 350 degrees.
Cream Puff Shell: Heat water and butter to boil. Stir in flour; stir hard over low heat until mix forms a ball. Remove from heat. Mix eggs in a separate bowl. Pour egg mixture into dough mixture; keep mixing until smooth. Mixture will be like a thick paste. Drop dough on cookie sheet by heaping teaspoons ??????? ungreased for 40 minutes until fluffy and golden. Cool on top of oven, away from any draft. Slice in half and remove some of the insides.
Fill with above filling; put top on and sprinkle with 10X sugar. These are the best cream puffs you'll ever taste.

MMMMMMMMM, I love cream puffs! =
Ingredients:
1 sheet frozen puff pastry
2 pears, slightly under-ripe
2 tablespoons brandy
1 cup miniature chocolate chips
Directions:
Thaw pastry at room temperature for 30 minutes.
Preheat oven to 375 degrees F.
Roll pastry into a 16 x 12-inch rectangle and place on an ungreased baking sheet.
Peel, core and thinly slice the pears into a bowl. Sprinkle brandy over the pears and toss to coat. Place the chocolate chips down the middle third of the pastry and top with the pear and brandy mixture. Carefully fold the two sides up over the filling and press the dough together to seal the ends. Bake about 25 minutes, or until puffy and golden brown. Cool for 10 minutes before slicing and serve warm.

Vanilla Cream Puffs
I found this recipe in the 2003 Taste of Home Annual Recipe Book. They are easy to make even for a novice like myself.
PUFF
1 cup water
1/2 cup butter, no substitutes please
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
FILLING
1 1/2 cups cold milk
1 (5 1/8 ounce) package instant vanilla pudding
3/4 teaspoon almond extract
2 cups whipping cream, whipped
CHOCOLATE GLAZE
6 tablespoons semi-sweet chocolate chips
1 1/2 teaspoons shortening
3/4 teaspoon corn syrup
1/4 teaspoon ground cinnamon
8-10 servings
1. In saucepan, bring water, butter and salt to a boil.
2. Add flour all at once and stir until it forms a ball.
3. Remove from from heat, let stand 5 minutes.
4. Add eggs, one at a time, beating well after each addition.
5. Continue beating until mixture is smooth and shiny.
6. Drop by 1/4 cups at least 3 inches apart onto a greased baking sheet.
7. Bake at 400 degrees for 30-35 minutes (or until golden brown).
8. Remove to a wire rack.
9. Immediately split puffs open; remove tops and set aside.
10. Remove and discard soft dough inside puff.
11. Let cool.
12. In a bowl, beat the milk, pudding mix and extract on low speed for 2 minutes.
13. Let stand for 5 minutes.
14. Fold in the whipped cream.
15. Fill the cream puffs and replace tops.
16. In a heavy saucepan, combine glaze ingredients.
17. Cook and stir over low heat until chocolate melts and mixture is smooth.
18. Drizzle over cream puffs.
19. Chill for at least one hour before serving.
20. Refrigerate any leftovers.

Yep, and cheese puffs, Parisian puffs, chocolate puffs, blackberry puffs, eclairs and so on (you can even bake "cakes" with the dough)..
Where the first things I baked (was about 10 I think)
Very easy to make, only remember 3 important things:
- preheat the oven before beginning with the dough.
- beat the dough very well after each egg
- NOT open the oven before baking time is over
