Determine the amount of each ingredient used and divide by your mixer size if that is how much you will use.
a 3 quart mixer needs 1/20th as much of each ingredient as your 60 quart mixer....IF the 60 quart recipe is for a full 60 quarts.
I would then compare the amounts of what I ended up with, to any online recipe to make sure I have the correct, like amounts.
Make sure if you are dividing cups you have a chart (or a gradient cup)that gives either teaspoons or tablespoons to a cupful.

Dividing by 10 is only a start. The entire recipe will have to be re-standardized so it will turn out the same when made 1/10th the original size. So don't expect it to work too well,.. just keep tweaking until the consistency and flavor is correct.

Just get a 60 qt mixer, make your recipe, take out what you need and then open up a restaurant with the rest.

If you have a relatively srtandard mixer, it's just about 6 qts, so just take the recipe and divide it by ten, right ?

If you're not married to this particular recipe, go to allrecipes.com, they have tens of thousands of recipes and each one can be expanded or shrunk to however many servings you want. Find a similar recipe - well, you can figure it out from here.

Keep dividing by two until you get your answer...I have used this scenario many times over, and it works for me...
