pasta salad
Ingredients
1/2 package Pasta your choice of shape 8 oz Pepper Cheese cubed
1 medium Bell pepper sliced 1 small Onion chopped finely
1/3 Cucumber sliced 1/4 cup Apple Cider Vinegar
1/2 package Cherry tomatoes halved or quartered 2 large teaspoons Garlic chopped
1 small can Black olives sliced 2 teaspoon Dill
1 package Cubed ham or turkey
Instructions
Boil pasta until cruncy tender and drain.
While pasta is boiling add a soupscoup of boiling pasta water, apple cider vinegar, dill and garlic to a big bowl.
Add the drained pasta to the bowl and turn. Let this mixture sit until it's either cold or the pasta have soaked up the liquid in the bowl. It does not hurt the dish if there's some leftover liquid.
While the pasta is cooling and soaking up the liquid chop, slice, dice and drain the remaining ingredients and add to the pasta and mix well.
Can be eaten as is or served with garlic bread.

cook the penne and allow to cool. Add some tomato based sauce (bought or made). Blanche some nice fresh veg, either fry in the pan quickly until it has some colour, or drop into boiling water for a couple of minutes so it keeps most of its crunch.
Mix all the ingredients together in a pasta bowl. Slice some goats cheese up from a log and crumble over the top, then garnish with a few spring onions cut on the angle (45), to sprinkle over the top. Yum!

Penne Pasta with Yellow Tomatoes & Zucchini
Penne Pasta with Tomatoes & Zucchini
Serves 2
4-Cups of Cooked Penne Pasta
1-Zucchini, diced into cubes
1-Medium Onion, Diced
3- Medium Tomatoes, Peeled, seeded and diced
1-Tsp. Chopped Garlic
4-Tbsp. Olive Oil
4-Tbsp. Parmesan Cheese, Grated
1-Tbsp. Fresh Thyme, Chopped
Salt & Pepper to Taste
Heat 2 tbsp. of olive oil in a medium sauce pan.
Add onions and cook for 30 seconds
Add the Zucchini and cook for another 30 seconds
Add the Garlic & Tomatoes and Fresh Thyme
Season with Salt & Pepper and Cook for another minute
Add another 2 tbsp. of olive oil and then the cooked pasta
Serve when hot and top with shaved Parmesan cheese/You can also eat this cold...

olive oil, anchovies, basil, a little bit of chopped onion. (some like garlic but I can't digest it. You can substitute garlic for onion but in that case use it sparingly since the flavor of the garlic can easily outpower and kill the flavor of all other ingredients (esp the basil)
This should do the trick for sauce. The percentage of each ingredient is based on your liking. Adding a little bit of red pepper chili pepper is good too if you like it spicy. Since anchovies are salty, you probably won't need a lot of it but add salt during the summer months.
Food tastes better saltier during the summer.
Just be careful of anchovies. They can go bad quickly so refridgerate all unused/large portions in the fridge. DO NOT LEAVE IT IN THE SUN!!

Try mixing in some chicken, corn, tomatoes, sweet red peppers, olives, onion, and even mushrooms..
To make the sauce, try mixing some 1/3 cup olive oil, about the same amount of balsamic vinegar, about 1 1/2 table spoons mayo, a little bit of mustard, salt, pepper, oregano, basil, some crushed garlic, and a little bit of wine if you have some handy.. hope you like it

Buy the Gazebo brand Greek Salad Dressing. Cook and cool pasta...add peperoni...cheese cubes of your liking...olives....very small cut (par-cooked) broccoli florets, shredded carrot. You can also do big chunks of tomato and green pepper. Very simple but has a lot of variety at the same time and very delicious.

I like the taste of penne pasta cooked and chilled with broccoli florets cooked & cooled but still crisp, oil, some garlic (fresh or garlic powder/salt) & italian dressing. The longer you have it mixed & marinading the better it gets.

Cook the penne and allow to cool.
Add a tin of Green Giant sweetcorn with peppers to the cooled penne.
Add a tin of tuna
Add a good dollop of mayonaise and stir in. Add pepper - no salt.

Add some vegetables that are in your frig. Dice onion sliced carrots, sliced celery, cook some broccoli flowerettes if you like and then just add Itaslian dressing. Its great way to use up leftover pasta.
