Use Mozzarella on the base as this forms a cooking underlay for the ingredients. Use any other cheese you like amongst the ingredients - Cheddar is okay or Double Gloucester. I wouldn't use Edam or Feta as these are both low on flavour as is the mozzarella. Finally sprinkle Parmesan on top and around the edges as this prevents burning of the base - unless you prefer the base to be burnt.

Mozzarella melts best, but the addition of a stronger Italian cheese like Asiago adds excellent flavour.

True Mozarella made with she-buffalo milk...
Then add a few slices of french goat cheese on top...
(The one shaped like a small white cilinder)
It melts beautifully and adds a great flavour!
