I have a great recipe that I use that makes a bbq sauce for the meatloaf. I use beef(I've never used the beef, pork, and veal tri, although I would like to try it), add 1 egg, 1 cup of breadcrumbs, 1/2 cup tomato sauce, 1 onion, chopped, and salt and pepper. I usually add a little bit of garlic salt and some other seasonings. But it's so gooood. Especially if you make the bbq sauce when you first put the meatloaf in the oven and let it cook the entire time the meatloaf is cooking(1 hour and 15 minutes), it turns sweet(I usually don't add the water to the sauce, it's never really thick) and then I pour the sauce over top within the last 10 minutes of cooking, take it out, pour more sauce over top and let it rest for 5-10 minutes, then enjoy!!!! Oh my gravy is it good!!!!!!!!!!!

1/2 pound sweet pork sausage, casings removed
1 cup cheddar cheese, cut into cubes
2 large eggs
1 medium-size onion, finely chopped
1/2 green bell pepper, seeded and finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon celery salt
1/2 teaspoon paprika
1 cup milk
1 cup fine dry bread crumbs
1. Heat the oven to 350°F.
2. Line a large baking pan with oiled aluminum foil and set it aside.
3. Combine all of the ingredients in a large mixing bowl. Using your hands, blend everything together until it is evenly mixed.
4. Transfer the meat to the lined baking pan and form it into a long, fat loaf, about 10 by 5 inches.
5. Bake the loaf for 60 to 70 minutes, until the center is cooked. (According to the USDA and the National Pork Board, pork should be cooked to medium doneness with an internal temperature of 160°F before eating.)
6. Serve hot, warm, or cold. Makes 8 servings.

I'm from Chicago. I cook things differently all the time. But with meat loaf there are certain basics. 100% pure beef 85 % fat free. Ketchup, seasoned bread crumbs, onions, celery, bell peppers, garlic, egg, grated parmesan cheese, red pepper flakes, 1/2 cup of italian dressing. If you don't have bread crumbs and you have it try oatmeal as a binder.NO SALSA!!!

Brown Sugar Meatloaf
. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar.
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 lbs lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine crumbs
6-8 servings
1. Preheat oven to 350 degrees.
2. Lightly grease a 5x9 inch loaf pan.
3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
4. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
5. Place on top of the ketchup.
6. Bake in preheated oven for 1 hour or until juices are clear.
This is the recipe I use..

I use ground beef, add an egg, bread crumbs, salt, pepper, onions and diced green peppers. I like to pour a can of tomato sauce over it near the end of cooking time. I live in the Northeast US.

I used ground sirloin with a bit of ground sausage. I added chopped vidalia onions, minced garlic, chopped poblano peppers, a dash of worchester sauce, an egg, dry bread crumbs, dried herbs (thyme, savory, marjoram), a tiny bit of curry powder, a dash of spicy mustard, salt and pepper, and enough cream to wet everything enough to stick together. Bake it at 400 degrees until done.
I am from Gulfport, Mississippi.
