Crab apples are remarkably tart. I would suggest using them with another fruit or in combination with regular apples. Alternatively, you can cart the tart with a little citrus and add extra sugar.

You can eat crab apples, but they are very sour. You would probably need to use a lot of sugar.

They'll probably be great if you have the patience to peel and core the little things. You may want to add a little extra sugar if the recipe you are using is usually made with red or yellow delicious, Macintosh, etc. If the recipe uses Granny Smiths then just exchange them cup for cup or pound for pound.
