This is an open-ended question. There are many recipes for pinchos, it depends on if you are looking for a fruit recipe, pork, chicken, etc.

I have researched and found a few that you might be interested in:

(Fruit Brochettes)

If you get carried away with colorful, reasonably-priced fruit at local markets - as I do - and buy too much, this is a wonderful way to use it up.

Use fruit which is in season.

The chocolate and cream is optional - to be used either on top of or under brochettes.

Ingredients

- 2 bananas
- 2 apples
- 2 pears
- 2 oranges
- Slice melon
- Little (brown) sugar

Optional:
- 200 gr dark chocolate
- 1 glass single cream

Method
1. Peel fruit and cut into large chunks.
2. Arrange on 4 brochette spears.
3. Sprinkle with sugar.
4. Brown under hot grill.
5. Serve.
6. Optional: melt chocolate in microwave, stir in cream.
7. Serve brochettes on bed of chocolate or covered in it.

Pinchos Morunos (Chicken)

1 pound chicken breast
1 small onion, diced
3 tbs olive oil
4 cloves garlic, chopped
1 1/2 tbs ground cumin
1 tbs parsley, chopped
1 tbs paprika
1 tsp oregano
1/2 tsp flake chili pequin
salt and pepper to taste
Pinch of saffron

Trim chicken well and cut into1inch cube. Set aside.
Place all other ingredients in processor fitted with metal blade.
(You can use mortar and pestle adding onion last).
Process until smooth. Do not over process or marinade will be runny.
Marinate chicken for at least 2 hours before using.
Grill or broil to chicken is tender.

1/4 cup olive oil or cooking oil
1 Tbsp. lemon juice
2 Tbsp. fresh, snipped parsely
1/2 tsp. ground cumin
1/4-1/2 tsp. crushed red pepper
1/2 tsp. dried thyme, crushed
1/2 tsp. paprika
1/8 tsp. thread saffron, crushed (you can substitute ground tumeric if needed)
1/4 tsp. salt
1/4 tsp. black pepper
12 ounces boneless meat, cut into 1-inch cubes (chicken or pork work best)
Fresh Italian or French Bread slices


In a medium mixing bowl stir together olive oil or cooking oil, lemon juice, parsley, cumin, red pepper, thyme, paprika, saffron, salt, and black pepper. Pour into a plastic bag; add meat pieces. Seal bag; turn to coat chicken with marinade. Marinate in the refrigerator for 4-24 hours, turning the bag occasionally.

Drain marinade from meat, reserving the marinade. Thread chicken pieces on 4 long skewers, leaving about 1/4 inch between pieces. If using wooden skewers, be sure to soak them in water before using to keep them from burning.

Place chicken kabobs on the grill rack of an uncovered grill. Grill directly over medium coals for 10-12 minutes, or until meat is tender and no pink remains, turning once and brushing occasionally with reserved marinade.

Before serving, swab once more with marinade and then remove form the grill. Serve hot with a slice of bread thrown on top!
