Historically HARD Cider has always been used to distinguish Cider with a High Alcohol content from just plain Cider so somewhere around the mid 1800's people began applying the term to liquor. Soft Drinks came about because of the obvious bubbles, the carbonation that became popular after America's not so Civil War - - - when Soda Fountains began to spring up, their beverage was often touted as 'Soft' as in good for the stomach. And that's the hard and soft of it.

Precentage of alcohol is high in hard liquor like whiskey, vodka.
Beer has 3% to 9%
Softdrinks have no alcohol content so they are soft on body especially liver.
Alcohol damage liver cells and cause effects in the brain.
Chronic alcoholics get Liver chirrhosis where the cells in the liver got hardened and they lost their functions.

alcohol content, (abv)
the higher the abv the harder the drink, fruit drinks that do not contain any alcohol are at the soft end of the spectrum.
