This recipe will feed an army, and takes a big pan. If you don't have a pan this large, consider halving the recipe. There is more chocolate in these brownies than flour!

Outrageous Brownies

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee powder
2 tablespoons real vanilla extract
2 1/4 cups sugar
1 1/4 cups flour, divided- 1 cup for batter and 1/4 cup in the chips and nuts
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces

Preheat oven to 350º F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.
Melt together the butter, 1 pound chocolate chips, and bitter chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.

Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with 1/4 cup flour to coat. Then add to the chocolate batter. Pour into prepared pan.

Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

Chocolate Brownies

Preparation time: 30 minutes
Cooking time: 40 minutes

Makes 24

Ingredients
375g unsalted butter
375g dark chocolate
6 large eggs
1 tbsp vanilla extract
500g caster sugar
225g plain flour
1 tsp salt

Instructions
Preheat the oven to 180°C, gas mark 4. Line a cake tin measuring about 32 x 22cm with foil or parchment.

Melt the butter and chocolate together in a large heavy-based pan. In a bowl or large, wide-mouthed jug, beat the eggs with the sugar and vanilla until well combined. Measure the flour into another bowl and add the salt.

When the chocolate mixture has melted, let it cool a bit before beating in the egg and sugar mixture, and then flour. Beat to combine smoothly and then scrape into the lined tin.

Bake for about 40 minutes. When it's ready, the top should be dried to a paler brown speckle, but the middle should still be dark and dense and gooey and only just firm. Keep checking: the difference between gungy brownies and dry brownies is only a few minutes; remember that they will continue to cook as they cool. Cool completely before cutting into squares.
