Start with a tomato/mushroom/ or mix veg soup & for the main course try the following,
if they like meat, get 2 nice steaks of it, marinate using spices & herbs, grill lightly or cook on a non stick pan, till desired ie med or w.done use a fork to check if its cooked properly, while that is on saute (lightly fry) some sliced fresh veg, carrots beans, mushrooms aubegines etc, its fast, in the case of fish do the same, a lettuce/tomato/cucumber salad tossed with lemon & salad oil on the side, for dessert serve freshly cut fruits with icecream, this is a complete meal

Saute some fresh veggies add a little thin sliced chicken and serve over rice or mike with cooked Rainbow ritioni for a pasta salad.

Make a nice salad!
What matters is the ingredients!!
I like a salad with greens and mango, but some salads can become real meals if you add some sort of meat.
I also love this one:
- Fresh greens,
- Sun-dried tomatoes (leave them in water to rehydrate and then take them out of the water and add some olive oil),
- Some buffalo mozzarela cheese,
- Freshly fried bacon strips,
- Grated provolone,
- Coarselly choped hearts of palm,
- Black olives and fresh mushrooms if you like
- Your choice of dressing!

pasta would be the best bet. it's simple and non-fussy and you couldn't possibly go wrong. buy a can of tomatoes and tip it into a saucepan with a sprinkle of sugar, some salt, pepper, lots of basil, 4 flakes of coarsely chopped garlic, 1 small minced onion and some mince(which was previously browned) if you wish. let it bubble and stew till everything is a nice aromatic mass. when it's just about finishing, bring another large pot of water to the boil, add salt and a swirl of olive oil and dump in a small bag of pasta. cook till it's done then drain and spoon into a serving dish. serve with the sauce and garnish with shavings of parmesan cheese.

Put an herb rub on chicken breasts, cook them up, then cut them in slices over a fresh salad with spinach, mandarin orange slices, almond slices, dried cranberries and cherries, and make a nice light dressing to pour over it. Yum!

simple and good - whole cut up chicken, put in dutch oven with stick of butter, add two cans of mushrooms, about two tablespoons of dill, and juice of one lemon, simmer til chicken is cooked, serve with juices/muchrooms over noodles.
