exactly! i ask myself the same question all the time when i see people relishing slabs of uncooked meat. maybe it's something primal and dates back to the early evolutionary stages of man. you know, caves, clubs, hunting...

I like my steaks medium rare, it just gets brown enough on the outside and is very pink in the middle..yet still warm all the way through. I think it really has the best meat flavor.

Just leave the cow in the sun for a few minutes then bring me my steak!
I used to love blue steak, it tastes much better and is more tender than the 'properly cooked' stuff (apparently cow's blood tastes like a steak smoothie - not sure I would go that far though).
It's also more natural - our ancestors ate raw meat before we discovered that fire is not just for warming our toes.
By the way I am now a vegan, lol.

Because there is more taste. Meats are not meant to be well done. You remove much of the nutritional value as well as taste. However itis hard to find chefs that can properly cook meat. many don't time the cooking effectively.

Since a child iv always loved cold meat, and sadly I'm one of the people who like their meet blue, but i have been told that most restaurants cant cook it that blue anymore due to health and safety laws. So i suppose its getting that all our diff tastes cant be catered for anymore :-(.

I prefer my steak cooked rare. A) better flavor; B) more tender; and C) juicier. Everything else has to be well done.
Like my mom used to say..."Wipe its @ss, slap it on the back and run it through a hot kitchen!" MOOOOOOOO :D

For the same reason that some people want their meat so overcooked that you could use it as shoe leather.
It's all about personal taste.

It's proof that some thing are to good to be improved upon, and that my hubby truly is a Neanderthal at times, but I already knew that.

if you have a fillet steak cooked well done its like shoe leather and having it rare or medium keeps it tender and moist.
