i'm not too sure about what added compound the yeast has to make it "instant" but the thing about instant yeast is it shortens the whole bread-making procedure drastically. the first rising will only take about 10-20 minutes as against the usual 40-60. the second rising however will be longer and more like the usual yeast requirment. i personally prefer sainsbury's own brand or fleischmenns yeast.

There are two types of yeast to use, one is the fresh yeast, the other is dried yeast, Fresh has to be used within a couple of weeks, dried will last indefinately.Both have the same results
