Um, what's the question? Are you asking if "dating" means you are moving on to a sexual relationship? I don't understand why you are hung up on the words. You have been developing a relationship with this man. He's made it official by saying that you two are dating. He's telling you that he thinks of you as more than a friend. Provided that you are an appropriate age, treat it like any other relationship. If you want to kiss him, kiss him. If you want to invite him to spend the night, invite him to spend the night. Are you not ready for the physical stuff but worried that he expects it now? Well, he's just going to have to be a gentleman and wait until you are ready. If you aren't ready and he's making advances just nicely explain to him that you're not ready. If he's a gentleman he'll respect that. Just try to relax and let things continue along at it's own pace. Eventually you two need to talk more openly about what's going on between you.

I think maturity means that you can bypass all the confusing, exciting (yet sometimes painful) love & dating games we all play in our teens and 20s.
It should be possible to have an open discussion with him about where you're heading. (At the age of 40, I think guys are better equipped to know who they are, what they want, who you are, what you want.) I don't think he'll get freaked by a honest conversation.
If both your expectations from the relationship are different, it's good to know; if they're the same, even better : )
PS - I wouldn't confuse love and sex. It's entirely possible to have sex with both parties knowing it's nothing more; it's equally possible that you're embarking on something that's true and lasting without sex (yet). His 'dating' comment might mean either of these - the only way to find out is to talk!
