Cheese is a solid food made from the curdled milk of cows, goats, sheep, water buffalo or other mammals. The milk is curdled using some combination of rennet (or rennet substitutes) and acidification. Bacteria acidify the milk and play a role in defining the texture and flavor of most cheeses. Some cheeses also feature molds, either on the outer rind or throughout.
There are hundreds of types of cheese produced all over the world. Different styles and flavors of cheese are the result of using different species of bacteria and molds, different levels of milk fat, variations in length of aging, differing processing treatments (cheddaring, pulling, brining, mold wash) and different breeds of cows, sheep, or other mammals. Other factors include animal diet and the addition of flavoring agents such as herbs, spices, or wood smoke. Whether the milk is pasteurized may also affect the flavor. Cheeses are eaten both on their own and cooked into various dishes; most cheeses melt when cooked.
For a few cheeses, the milk is curdled by adding acids such as vinegar or lemon juice. Most cheeses, however, are acidified to a lesser degree by bacteria, which turn milk sugars into lactic acid, followed by the addition of rennet to complete the curdling. Rennet is an enzyme traditionally obtained from the stomach lining of young cattle, but now also laboratory produced. Vegetarian alternatives to rennet are also available; most are produced by fermentation of the fungus Mucor miehei, but substitute "vegetable rennets" have also been extracted from various species of the Cynara thistle family.
The word cheese is derived, through Middle English chese and Old English cÄ«ese or cÄse, from the Latin caseus.

Cheese, is one of the major food stuffs, in the world, that serves all sorts of purposes...from sprinkled onto tacos and burritos, to being served sliced, shreded, and even melted, it's a great food.
From the Milk and Dairy field, it's produced from Cows' milk, then refined, and comes from a varitey of places, sources, and even styles. Theres Cheedar, gouda, edam, motzerella, montery Jack, Colby, Swiss, american, etc....and as well, some cheese, aged, is even better....my favorite is a mild chedder, called longhorn style, usually aged about 30 days for peak flavor, or 60, if in a wax skin, in a brick form.
only drawbacks to cheese, is it can dry out, turn moldy, and if it gets wet, slimy...best kept wrapped in plastic, in it's original container, or, if shredded, put in a tupperware container for later useage.

Cheese is curdled milk. Healthy bacteria are added, causing the curds to separate from the whey.
They whey is then separated from the curds and put into moulds.
Different bacteria strains make different cheese.

Simplistically, sort of like the hard residue of milk curd-ed in a specific way. Meaning, using special yeast, special processing, and, for some cheeses, special fermentation procedures.

cheese is the product of heating milk and separating it in to curds and whey. The curds are then pressed to extract any fluid that is in them and cheese is made but it has to mature first before you can eat it.

cheese now let me think o'h yes baby cows food so in fact when we milk a cow we are stealing the life forces of baby calfs who end up getting no milk to make them big an strong so wither an die instead poor calfs boobooboooo
