I want to add chicken or shrimp , not full recipes from books or the web please .

Use Hoisin as a marinade for meat with some garlic / ginger . When almost finished cooking add some mandarin pieces to give it a sweter taste and to cool it down .

It would depend on the kind of spice you want to use..

Peppers are the ticket though.. you can use regular bell peppers, or jalapenos, crushed red pepper. Chili powder would also add a little zip.

Experiment, the best stir fry I've ever made was just throwing spices in at random. Remember though, it's a lot easier to ADD spice than it is to take it out. So slowly add more spice until it is right.. Taste it as you go to see how it's coming.

A good tip is to keep track of how much you put in, so you can make notes and have a repeatable recipe should you discover something wonderful.

A dash of sweet chilli sauce stirred into the oil in the pan before adding the ingredients works well, and adds the spicy flavour evenly. If you use solid ingredients like crushed or chopped chillis you can end up with a "nasty surprise" of a very hot mouthful when eating!

You'll find this with the Thai or Chinese foods in the supermarket.

That would depend on you. If your normal recipe tells you to put 1 and 1 tablespoon of chopped chiles, lessen it. Are you talking about Thai stir fry? or chinese?..

Any sauce that needs to be toned down can be sweetened with a little Hoisin sauce. I use Kung Pow sauce as my base and add a bit of the Hoisin.

if you want heat but not fire make sure before chopping chillies you remove the seeds and most importantly the white membrane that the seeds are attatched to. Most people think the seeds contain the fire but actually it is the white part that the seeds are attatched too.
