Why were so many books removed from the Bible when it was being compiled in 325? Doesn't it make you wonder how much of the truth was subtracted? I'm curious to know what those other books said. Are they still around?

There are about 8 that I was able to find on Amazon and the last one the Gospel of Judas.
I think you can get a complete list of those books from wikipedia.
Some of those Gospel preached that Jesus is not God.
Few said he was not crucified.
Few, if not all of those books talked about one more messenger coming to the world.

First the books that you say that removed they were not ever books of the Bible.
Second you must distinguish between Church and Bible. The Bible is a book of the Church of Christ (for me book of Orthodox Church). The Church has the right through the centuries to keep the truth of bible clear and to choose who books are illegitimate and who are genuinely

The books that were left out were studied and determined to be dated out of the proper range for writers directly having had contact with Jesus Christ or any of his original 12 disciples or witnesses from His time. It was, further, determined by religious scholars of the times that the books that were actually to be added to the bible were inspired scripture written by those who had direct access to people and events that occurred during the time of Christ or those who actually lived in His era.

*They are around and you can read them too. Again, this is something that requires much more effort than asking questions here. But you can get them and read them; some are quite interesting and I highly recommend you do so.
