Here's an easy one...
CREAM OF BROCCOLI SOUP
Boil 2 lbs. of broccoli (cleaned and chopped) with 2 peeled potatoes in 2 quarts of water with a little salt and pepper ( you can replace the salt and pepper with bouillion cubes) once the broccoli is tender, put everything in the blender and add an 8 oz. glass of whole cooking cream. or 3 ozs. of cream and a glass of skimmed milk (for less calories).
Vegans can replace these with soy or rice milk.
Serve hot with croutons and a little chopped fried bacon if you like

I like to cut the florets into smaller pieces, mince fresh garlic and have a small dollop - less than a quarter teaspoon - of Thai or Chinese hot pepper sauce ready.
Heat the wok (or large pan) to high with a small amount of olive oil. Add the garlic to flavor the oil, stirring until the flavor is released, but not to the point of browning. Then add a small amount of water, mix in the pepper sauce and stir in the florets. Put a lid on the wok/pan after turning the heat down to medium, so the broccoli steams. Serve as a side by itself, or over a small pile of linguine. Very nice.
If the hot THai sauce is too daring, leave it out, and top the broccoli with fresh squeezed lemon.
Prep time, about five minutes. Cook time, about ten minutes.

Well, there's two ways to use broccoli in our house, considering I've got finicky eaters....one way, is in a stir fry, using beef, pork, or shrimp, broccoli, carrots, water chestnuts, some unshelled peas, baby corns, and some kikoman stirfry mix...takes about 20-30 minutes, but is easy to make, and run with....and depending on how many people you serve, can be served over rice, straight on a plate, and the remaining portion can be heated later for a second or third meal.
option two, is broccoli cheese soup, using campbell's instructions, usually adding in extra florets of green, improves the taste a bit....plus, oyster crackers, or salteenes, depending on how much flavor you want.
Oh, and side note, from my 19 month old daughter....broccoli and ranch dip, for a fun food. Good luck!

Place a layer of Sliced potatoes in bottom of a 13x9x2-inch baking dish or lasagna pan. On top of that, place chopped Broccoli, stir in fresh cream and cover it with Mozzarella, permesan and bread crumps…. Baked it…. And enjoy….

Broccoli is the greenest vegetable there is and with most Vitamin C and good for blood levels and heart.
You can make pies, quiches, soups, have it with cheese or any type sauce.

Chicken and Brocalli Bake !
Simple and delicious!
JUst lightly brown your diced chicken in a pan put into a cassarole dish with your brocalli pour over campbells condensed chicken soup (after doubling the amount with water) bake in the oven, when almost done sprinkle with cheese!! YUM

you may steamed the brocolli first when it's cook wrapped it in bacon then put it in the oven for 3 mins or less. To make the sauce:
combine the mayo and sour cream add salt and black pepper to taste.
