Southern Fried Chicken
This fried chicken recipe makes enough for about 8 people. Scroll down to see more fried chicken recipes, including oven fried chicken recipes.
INGREDIENTS:
2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings
PREPARATION:
Wash chicken and pat dry.
In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well. Pour the milk into a wide shallow bowl.
Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F.
Add the bacon grease. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly. Arrange the chicken pieces in the fat, making sure not to overcrowd. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer. Turn once. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch.
Transfer the chicken to a large platter for serving.
Serves 8.

Homemade Kentucky Fried Chicken

Ingredients
2 packages dry Italian dressing mix
3 tablespoons flour
2 teaspoons salt
1/4 cup lemon juice or white vinegar
2 tablespoons vegetable oil
3 lb chicken fryer parts
1 1/2 pints vegetable oil
2 cups milk
Dry pancake mix
Instructions:
1. In a mixing bowl, combine Italian dressing mix, flour, salt, lemon juice or vinegar and vegetable oil to make a paste.
2. Spread paste over chicken parts and transfer to a large platter. Cover and let chill in the refrigerator for at least 1 hour.
3. Heat vegetable oil in 10" skillet.
4. In a mixing bowl, add 2 cups milk.
5. Dip chicken pieces into milk, then dip chicken in pancake mixture to coat lightly.
6. Begin adding chicken pieces to skillet, being careful not to overcrowd.
7. Preheat oven to 350F.
7. When all chicken pieces are cooked, transfer to roasting pan and bake at 350F for 1/2 an hour.

Season the chicken (salt, chicken seasoning, adobo) and marinate in buttermilk for 30 minutes in the refrigerator
Remove from buttermilk mixture and coat in flour
Fry (starting with legs and thighs first) until golden brown
