My Favorite Meatloaf
To 1 lb fresh ground sirloin add 6 minced habanero peppers, 1/2 tsp. salt, 1 chopped onion, 1/2 C. tomato sauce, 1/2 c. dry bread crumbs, and 1 egg. Mix together all ingredients in medium-sized bowl. Press mixture into loaf pan and bake about 45-50 minutes at 350 degrees. During last 10 or so minutes of baking top with remainder of tomato sauce used earlier. Can be prepared ahead (use glass loaf pan) and refrigerated. Bake an additional 10-15minutes since the mixture will be colder when you start.

The EASIEST recipes that I do(especially when I have company are:
Catalina Chicken...all you do is of course get boneless chicken breasts and wrap them with bacon and cover them with Catalina dressing and bake for an 45-50min covered with aluminum foil at 350 degrees and than uncover and bake until bacon gets crispy.
Another one I do...SO simple is Picante Chicken all you do is buy chicken breasts and cover them in Pace Picante sauce and bake at 350 for about 45-50min(covered) than uncover and top with cheddar cheese until melted. There are SO many easy little recipes I have...all the way to complicated I would take too much time and space LOL! I can say that the Catalina recipe IF not in the mood for cheese/Mexican is considered a huge hit(as in fancy...how long did it take you kinda-thing). If you feel what you want always google search it or go to dogpile.com(which is a hugher search site and look up what you want and I'll tell you what you get way more than expected...hint...make a recipe file lol).

Pheasant With Apples
~ 2 - 2 to 3 lb. pheasants, halved or quartered
~ 1/4 cup all-purpose flour
~ 1/4 tsp salt
~ 1/4 tsp pepper
~ 1/4 cup butter or margarine
~ 3/4 cup dry white wine
~ 3/4 cup light cream
~ 3 egg yolks, beaten
~ 3 tbsp butter or margarine
~ 2 medium apples, cored and cut into wedges
~ 1 tsp sugar
Combine flour, salt and pepper in a plastic bag. Add pheasant pieces one at a time; shake to coat.
In a skillet, heat 1/4 cup butter. Brown pheasant pieces on all sides.
Add the wine. Cover and simmer 45-55 minutes or until tender.
Remove to a platter and keep warm.
Sauce
Combine the cream and egg yolks.
Slowly stir into pan drippings and cook over medium heat until just thickened stirring constantly. Do Not Boil.
Sautéed Apples
In a skillet, melt 3 tbsp butter. Add the apple wedges.
Sprinkle with sugar. Cook, turning often, about 5 minutes or until lightly browned.
Pass the sauce with the pheasant. Sprinkle with paprika if desired.
Serve with the apples.
Enjoy!

"LOW FAT BANANA BREAD'
1 1/2 cups flour -2 teaspoons baking powder-1/4 teaspoon of baking soda-1 teaspoon salt ( combine in one bowl)
1/4 cup sugar-1/2 cup choped nuts(optional)-2 eggs, -1/3 cup corn syrup(Bee Hive) or no name brand-1 cup mashed ripe bananas(about tow or three small ones) Mix well and add dry ingredients and mix until flour is mixed in, put into non stick pan and bake at 300% slow until golden brown or until you can stick a fork in it and the fork comes out clean with no doughy substance on the fork. Let cool and then slice and put in zipp lock bags and freeze what you are not going to use right away. This is one that I get orders for all the time and sell to others. There is no oil or butter added just the taste of real banana. Good luck on this one you'll love it and so will your friends. Mich

I have a lot of recipes but here is one that my family especially loves!
Chicken Alfredo Lasagna
Ingredients:
1 jar of your favorite Alfredo sauce
1 can of mushrooms
1 can of diced tomatoes
1 can of diced cooked chicken
1 package of frozen spinach
1 package of mozzarella cheese
1 package of parmesan cheese
1 package of Lasagna noodles
Garlic, salt and pepper to taste
Butter or Olive oil
Preparation:
Defrost frozen Spinach and drain thoroughly place to the side for later.
Fill a pot with water and bring to a boil, add noodles and a generous handful of salt for seasoning…drain noodles and place to the side to cool.
In a frying pan melt butter or pour in some olive oil and add the chicken, mushrooms (drained), tomatoes (drained), and spinach (thoroughly defrosted and drained)
, add the garlic, salt and pepper to taste and then add the sauce…cook until the sauce bubbles and then remove from the heat.
In a baking dish make layers of noodles, then the sauce, then cheese until all ingredients are gone.
Top with a generous amount of cheese and then place in the oven and bake at about 350 until the cheese brown and bubbly.
****You can use fresh ingredients if you have them or if you prefer them, this is an easy recipe to switch out ingredients…just use what you like….this particular recipe should feed about 4 people comfortably so if you are feeding more than that you will need to adjust the amounts of ingredients you are using…now pop a loaf of French bread in the oven, whip up a salad and you are good to go!

Porcupines
1/2 kilo Mince, 1 Onion, Salt, Pepper, 1/2 cup Uncooked rice.
Mix together roll into balls, put into casserole dish.
Tip a can of tomato soup over the top and can of water - Cover and bake for 1 1/2 hours (easy).

Here are a few of my favorites that go over really well:
Busy Day Cobbler
1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon
Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.

Crockpot Beans
3/4 lb. bacon, cooked, drained and crumbled
1 cup chopped onion
1 (16 oz.) can pork and beans, undrained
1 can red beans, drained
1 can great northern beans, drained
1 cup ketchup
3/4 cup brown sugar
1 Tbsp. liquid smoke
3 Tbsp. vinegar
salt and pepper
Put all ingredients in crockpot and stir well. Cover and cook on low for 4 - 6 hours.

POTATO SOUP
Cut up celery and onion, add to water in large pot
Boil until vegetables are tender
Cut up peeled potatoes and add to water; boil until potatoes are almost done
Add sliced polish sausage, cook till heated through
Add a little butter and some milk, be careful not to curdle the milk
Add salt and pepper to taste
Turn down heat so you don’t curdle the milk and add Velveeta cheese until it has the cheesy flavor you like.

SOUTHWEST MEATLOAF
Makes 6-8 servings
2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.

ITALIAN BEANS PARMESAN
½ cup chopped onion
½ cup chopped green pepper
1 Tbsp. butter or margarine
1 (16 oz.) can whole new potatoes, drained and sliced
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can cut green Italian beans, drained
¼ cup Parmesan cheese
In skillet, saute onion and pepper in butter until soft. Add potatoes; saute 2 minutes. Add tomatoes, cook over high heat until slightly thickened. Add beans, heat through. Sprinkle with cheese. Makes 6 servings.

I made this for dinner tonight, it went over really well
Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream
1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!

1 Tablespoon of fructose
1 cup of frozen strawberries

Pick a meat you like - i.e., steak, shrimp, chicken, pork, salmon, etc. ... season with the spices you like (garlic, onion, basil, red pepper, 5 Spice, and tarragon are a few of mine); marinate in a sauce you like, i.e., teriaki, hot 'n spicy, oriental, bbq, honey-dijon, etc.; cook whole, or cut up (for kabobs - and bacon wrapped pieces of steak or chicken are to die for!). Now, veggies you like ... asparagus grilled in foil w/garlic & butter is real good; or cut up yellow/green/orange pepper(s); potatoes; onions; jalapenos; and add pineapple if you like, then do up your kabobs and grill. Yummy !!!!! That's only a few. If you're looking for dessert recipes, "Better Than Robert Redford" is one of my favs. Good luck, let me know if I've helped or can help again.
