Stuffed bell peper, very yummy and simple. Can be made with ground beef, tomato sauce and bell pepper. Vegans may substitute beans for beef.

Try this recipe, it has a different twist
Rice & Bean Stuffed Anaheim Pepper
8 cups water
12 (5-inch) Anaheim peppers, stems removed
1 1/2 cups cooked long grain rice
1/2 cup medium OR hot salsa
4 ounces (1 cup) cheddar Cheese, finely shredded
1 (15 1/2-ounce) can pinto beans, rinsed, drained
Fresh chopped cilantro, if desired
Heat oven to 350°F. Bring water to a full boil in Dutch oven.
Meanwhile, cut each pepper lengthwise down one side from stem to within 1/2-inch of tip. Place peppers in boiling water; cook 4 minutes. Remove; rinse with cold water. Remove seeds and veins from peppers; drain well.
Combine rice, salsa, 1/2 cup cheese and beans in medium bowl. Spray 15 x 10 x 1-inch jelly-roll pan with no stick cooking spray. Fill each pepper with about 1/4 cup bean mixture.
Place peppers in prepared pan. Cover with aluminum foil; bake 15 minutes. Uncover; sprinkle with remaining 1/2 cup cheese. Bake for 2 to 4 minutes or until cheese is melted and peppers are heated through. Garnish with cilantro.

Stuffed Green Peppers with Beans and Rice
2 8-ounce green bell peppers
Mrs Dash garlic and herb
1/2 cup cooked long-grain brown rice
2 green onions -- trimmed, chopped with tops
2 tablespoons sherry
1/3 cup chopped Plum tomatoes
salt and pepper
1 teaspoon fresh basil leaves -- (shredded)
1 teaspoon fresh parsley leaves -- (shredded)
1 pinch minced rosemary leaves
4 teaspoons grated Parmesan or Romano cheese
1/2 cup cooked white kidney beans
1 tablespoon marinara sauce (non-fat)
1 tablespoon chicken broth -- or as needed to moisten
2/3 cup Marinara sauce
1. Cut about 1/2-inch off top of bell peppers; core and rinse. Sprinkle inside lightly with Mrs Dash garlic and herb. Set cut side down on a microwave-proof plate. Cover with a moist paper towel. Microwave on HIGH for 2 minutes. Turn 45 degrees. Microwave for another 2 minutes. Repeat if needed to soften the pepper for the filling.
2. Combine rice, onions, sherry, tomato, salt and pepper, basil, parsley, rosemary and cheese. Stir well. Fold in rinsed beans. Add marinara sauce and enough chicken broth to moisten.
3. MEANWHILE, preheat oven to 400 degrees F.
4. Set pepper cut side UP in an oven proof dish with 2-inch sides. Fill each pepper with rice mixture. Bake in preheated oven for 15 to 20 minutes or until internal temperature is around 150 degrees F. Transfer peppers to dinner plates.
5. Heat marinara sauce in microwave. Serve with marinara.

Grilled Black Bean- and Rice-Stuffed Peppers
Grill a veggie bean fiesta and have it on the table in 30 minutes.
1 can (15 oz) black beans, drained, rinsed
3/4 cup cooked white rice
4 medium green onions, sliced (1/4 cup)
1/4 cup chopped fresh cilantro
2 tablespoons vegetable oil
2 tablespoons lime juice
1 clove garlic, finely chopped
1/4 teaspoon salt
3 large bell peppers, cut lengthwise in half, seeds removed
1 plum (Roma) tomato, diced
Additional chopped fresh cilantro, if desired
1 . Heat coals or gas grill for direct heat. Cut three 18x12-inch pieces heavy-duty foil. Spray with cooking spray.
2 . Mix beans, rice, onions, 1/4 cup cilantro, the oil, lime juice, garlic and salt. Place 2 bell pepper halves on one side of each foil piece. Fill with bean mixture.
3 . Fold foil over peppers so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
4 . Cover and grill packets over medium heat 15 to 20 minutes or until peppers are tender. Place packets on serving platter. Cut large X across top of each packet; fold back foil. Sprinkle with tomato and additional cilantro.
