What type of additive are you trying to avoid? If you make from scratch tradditional reciepes will never require you to add un-natural ingredients. Banana Walnut Muffins Ingredients 1 cup whole-wheat flour 1 cup flour 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup margarine or butter, softened 1/2 cup sugar 2 eggs 1-1/2 cups mashed banana (3 ripe) 1/4 cup milk 1 teaspoon vanilla extract 1 cup walnuts, coarsely chopped Preheat oven to 375 degrees. Grease muffin cups. In a large bowl, stir together the whole-wheat flour, flour, baking soda, baking powder, and salt. In a separate bowl, cream the butter and sugar; beat in eggs. Stir in the mashed banana, milk, and vanilla. Gently stir the banana mixture into the flour mixture; stir in the walnuts. Spoon the batter into prepared muffin cups. Bake for 25 minutes or until toothpick inserted in middle comes out clean

Zucchini Muffins

2 cups Muffin Mix
1/2 cup sugar
1/2 cup chopped nuts
1 tablespoon ground cinnamon
1 cup grated zucchini
1 egg -- beaten
1/2 cup butter -- melted
2 teaspoons vanilla extract
Preheat oven to 400ƒF. Spray muffin pan with nonstick muffin spray.
In a medium bowl, combine Muffin Mix, sugar, nuts and cinnamon. In a
separate bowl or measuring cup, combine zucchini, egg, butter and vanilla.
Add all at once to dry ingredients. Stir until just moistened; batter
should be lumpy.
Fill prepared muffin pan 3/4 full. Bake 20 to 25 minutes or until golden
brown.
Makes 10 medium muffins.


Muffin Mix

8 cups all-purpose flour
3 cups sugar
3 tablespoons baking powder
2 teaspoons salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
In a large bowl, combine flour, sugar, baking powder, salt, cinnamon and
nutmeg. Mix well. Put in a large airtight container. Label with date and
contents. Store in a cool, dry place. Use within 6 to 8 months.
Makes about 11 cups of Muffin Mix, enough for 4 batches of muffins.

Crumble Topped Zucchini Walnut Muffins Recipe
Yet another recipe I made with stuff around the house.
Topping
1/4 cup flour
1 1/2 tablespoons margarine
1 1/2 tablespoons sugar
1/4 teaspoon cinnamon
Muffins
1 cup flaked cereal (I used Post Honey Bunches Of Oats)
1 cup shredded zucchini (no need to peel, this is about 1/2 of a medium zucchini)
1/2 cup unsweetened applesauce
1/4 cup oil
1/2 teaspoon vanilla
3/4 cup whole-wheat flour
3/4 cup unbleached all purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup soy milk, or more
1/3 cup chopped walnuts (optional)

6-12 servings 6-12 muffins
30 minutes 10 mins prep
Preheat oven to 400 degrees F.
Spray either 6 large muffin baking cup pan or 12 small muffin cups with cooking spray.
Make the topping, combine flour, cinnamon and sugar, cutting in margarine until mixture resembles coarse crumbs and set aside.
In a large bowl, mix together the cereal, shredded zucchini and applesauce.
Set aside for 5 minutes, or until cereal is softened.
Once cereal is soft, add the oil and the vanilla.
Stir together flours, sugar, baking powder, baking soda, salt and cinnamon in a medium bowl and set aside.
Add the flour mixture to the zucchini mixture, stirring until combined, you will need to add the soy milk to make it not such a stiff dough, you may need up to 1/4 cup or more.
Stir in chopped walnuts (if using).
Divide the mixture to muffin cups evenly.
Sprinkle the muffins evenly with the topping.
Bake for about 20 minutes, until golden and a toothpick inserted into the center of a muffin comes out clean.
Place on cooling rack, cover with a tea towel for 5 minutes.
After the five minutes, run a butter knife around the muffins, then remove very carefully, they are very soft and delicate.
Cool completely, place in tupperware lined with a paper towel.
Freeze after 1-2 days, wrapped in plastic wrap.
These would also be good with 1/2 cup cinnamon chips in place of the walnuts.

I make these muffins at least once a week cos they're so yummy they don't last long! My 2yr old helped me make this mornings batch! 3 mashed bananas 1/2 cup sugar (I use raw) 1/2 cup vegetable oil handful of choc chips (optional) (this is where u could add walnuts) 1 teaspoon vanilla essence 1 teaspoon baking powder 1 teaspoon bicarb soda 1 cup rolled oats 1 egg 1 cup wholemeal flour, sifted Combine sugar, oil, mashed banana, egg, vanilla and oats in a bowl. Let stand for 5 mins. Add flour, baking powder, bicarb soda. Stir in choc chips (walnuts). Bake in greased muffin trays, moderate oven (180C) for about 20 mins. Makes 12 medium. Yum! Enjoy!
