hi friend,
when I cook, I use crackers in the meatloaf, but oatmeal can be to. It takes using the right mixture of both. The eggs are really what holds it. The biggest thing is to try to push all the air out of it before you bake it.To much oatmeal or crackers and it will be dry.. just experiment.

I think the egg actually holds it together, but i've got to much ketchup in mine and it has fell apart. On the other hand I made one the other day and was out of eggs and used crackers instead of oatmean and it came out fine. And to if your meat is to fine or greasy that could have been part of it...I don't know...would love to see others answers.

Could have been the meat. If there was too much fat, it can saturate the oatmeal and cause it to be crumbly. Use a leaner ground meat and maybe a little more oatmeal next time. Find recipe you like and stick to it.

I would try using italian bread crumbs instead of oatmeal! You might have put to much ketchup in! A-1 steak sauce would add a unique flavor also if you are willing to try it!

i have never heard of oatmeal being put in meatloaf i have always used bread crumbs

hi, well i make my meatloaf with:
beef
2 eggs
1/2milk
2 slices of bread crumbs
salt pepper
"meatloaf seasoning"
ketchup

never heard of using oatmeal i use crackers it keeps it together or you can use flour stop with the oatmeal that's just weird

What's the weather like? Differences in humidity and temperature in the air can make a difference in how things stick together or maybe don't stick together.
