since you are a guy, you didnt fully describe your hair shade, but i think it will work.
ask your gf if she can come up with a picture or drawing with color if you are worried about what it will look like

First of all,I wouldn't do it if she is not a professional. Too many things can go wrong when you use chemicals at home.Second, you have medium blond hair.....carmel color would be a medium shade like you already have.I don't know if that would show up. I would have to see your hair. Another thing....if something did happen to your hair,how would it affect your relationship?All in all, I think it is a bad idea.

DON'T let that girl, no matter how much you love her... tell you what to wear or do with your hair. My brother gave in to the highlights thing once, and ugh.. it was totally NOT for him.

i would go a little darker you want it to be a darker than your own color.
