I made some chicken cigars with a salsa dipping sauce. I served them with rice and beans with smoked mozarella. It was awesome. The chicken cigars are ground chicken with lots of spices like chili powder and pepper and garlic and cumin. I roll them in some phyllo dough and pop them into a 425 degree oven for about 20 minutes. They are the best and can feed an army or you can make a couple for you and a loved one.

As I try to wage my own battle against high gas prices, I chose to be very conservative and make meat loaf. We also had salad, some garlic bread (had some left over, trying not to waste) and Spanish rice (this too being a leftover). Sounds pretty bland but like I said, it's too expensive to drive and getting too expensive to eat out.
