Marinate the chicken in a paste of ginger, garlic and lime, for about an hour before cooking in the fridge. When you cook this chicken with the marinade of your choice the ginger garlic paste will not give out its own strong flavor bit will enhance the flavors of the condiments you use.
Use this chicken to make any recipe without washing off the marinade. Your chicken Will never taste bland.

You can try marinating pieces. If you are doing a whole chicken try a lot of salt and go a little more hefty than you normally would on the pepper. Stuffing a whole chicken with onions, garlic, other various root veggies, herbs and citrus makes a difference. Try mixing chopped herbs and or garlic and or citrus zest into room temp butter. Put in fridge...take out when hardened and chop...put under the skin of the chicken before cooking. All are good ways to flavor chicken.

Here is my own creation for marvelous chicken! You don't have to use a whole chicken, or bake on a rotisserie. Peices seasoned w/ this rub do just fine.
**Sugar Pie's Rotisserie Rub**
2 tsp kosher salt
2 tsps paprika
½ tsp chili powder
1½ tsp garlic powder
2 tsps freshly ground black pepper or coarse ground black pepper
1 tsp onion powder
2 tsp. dry parsley
1 tsp. dry rosemary
1 tsp dried thyme
2 tsp. dried orange or lemon rind (Spice Islands makes this)
Mix well and rub inside and out of a 4-5 pound chicken, or 2 (3 lb.) chickens. Tie legs together, and tuck wing tips under. Cook on rotisserie or in 325ºF oven approx. 1 ½ hours or until juices run clear.

It's not always so much what you put on it,it's how long you put it for. I have found that if you season the chicken overnight it absorbs the seasoning better. If you're not able to do this then, make a few slits in the chicken & place the seasoning directly in these cuts, along with rubbing it all over the chicken & let sit for about 1 hour. A few seasoning ideas:
1) salt, pepper, diced or grated onions, & crushed garlic(all together)
2) Zesty Italian Dressing,onion soup mix & apricot jam(all together)
3) All ingredients from #1 plus curry powder about 2 tsp
4) Sweet & sour sauce along with salt & pepper
5) 1 tsp olive oil, sprinkle of oregano & crushed fresh garlic, salt, pepper (best on skinless chicken

hey why dont try this one
seasoning for 20 chicken wings ( for oven roast )
light soya sauce(depends on how salty u want it to be), 5 fresh oranges squeeze to orange juice( once done dont throw away dice the orange skin n put together with the wings),2 tablespoons of lemon juice,a table spoon of brown sugar..
Try it n see if u like the taste..Been doing it n everyone loves it :)

Baste in the last ten minutes of baking with concentrated orange juice and soy sauce mixed to taste. Or try this, I have a tough rosemary plant in my kitchen window. I lay the chicken pieces out on a baking tray, use a little salt and crushed garlic and with scissors, shred a bit of rosemary over the top. Bake at 350 for about an hour.
