The quality and taste of the ingredients is the key to success with Alfredo sauce - especially the cheese. You should use freshly grated cheese. In the tradition of northern Italian cuisine, this sauce is rich with cream and flavorful, aged parmesan cheese (Parmigiano Reggiano), but you could use a mix of Parmesan and Romano cheese fresh grated (equal amounts). I have known persons that replace the Parmesan cheese for Gruyere cheese, but I haven't taste it yet.

Romano is the cheese of choice for Alfredo sauce. Make sure it's freshly grated!

Both....however don't use salted butter when you make your white sauce as the cheeses will make it very salty if not.
