Really. Does it make a difference?

I don't know about freshness but I think it tastes better left in the cupboard. However, I think you have to refrigerate the organic peanut better once opened so it doesn't get rancid.

I keep homemade peanutbutter in the fridge, but have never really noticed any difference in how it tastes in storing commercial brands.

Making it yourself isn't hard. Start with fresh untreated nuts, and put them in your blender, chopper or food processor. Add a little oil and tada - fresh peanut butter (we add honey to ours, and sometimes blend it with jelly or chocolate pieces). The beauty of this is the ability to adjust the texture and flavor to your taste (and you can CAN the results if you really like it!)

I've found it's also generally less expensive than buying it at the supermarket FWIW

No I don't think it makes a difference but it is harder to spread. Even though, it tastes better in the fridge cooled!!!
