Easy poor man's ziti:
Box of ziti noodles, jar of sauce, container of ricotta cheese, pack of grated mozzarella.

Boil a box of ziti noodles as directed, but one less minute.
In a rectangular cake pan, spoon (just enough to cover the bottom of the pan) your favorite jar sauce. I like no salt Francesco Rinaldi, because cheese adds the salt.

Arrange the cooked ziti over the sauce in straight rows.

On top of the noodles, spoon another layer of sauce and sprinkle 1/3 mozzarella cheese (you grate it or buy it in the pack already grated). Right on top of that spoon out ricotta cheese, store brand. Just put dollops of it every couple of inches.

Then another layer of pasta, and another layer of sauce, grated cheese and ricotta.

Then the final layer.

On the top, be sure to put the last of the sauce.

Cover with foil, Bake at 350 degrees for an hour or so.

If you want to get fancy, put a layer of Italian sausage in the middle, and cook an extra half-hour.

Baked Ziti with Pesto
FAST
SERVES: 4
Because it's baked, this pasta takes a bit longer from kitchen to table. You'll find the preparation time, though, is just as short as that of any other recipe.
ingredients
1/2 pound ziti
2 tablespoons cooking oil
1 onion, chopped
2 cloves garlic, minced
2 cups canned crushed tomatoes in thick puree
1/4 teaspoon salt
1 bay leaf
1/2 teaspoon fresh-ground black pepper
1 cup ricotta cheese
1 1/2 cups grated, packaged mozzarella cheese
1/3 cup grated Parmesan cheese
1/4 cup store-bought or homemade pesto

directions
Heat the oven to 350°. Oil an 8-by-8-inch baking dish.
In a large pot of boiling, salted water, cook the pasta for 7 minutes. It will be partially cooked. Drain. Rinse with cold water and drain again thoroughly.
In a medium saucepan, heat 1 1/2 tablespoons of the oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the tomatoes, salt, and bay leaf. Bring to a simmer over moderate heat and cook until very thick, about 10 minutes. Stir in 1/4 teaspoon of the pepper. Remove the bay leaf.
In a small bowl, combine the ricotta, 1 cup of the mozzarella, about half the Parmesan, the pesto, and the remaining 1/4 teaspoon pepper.
Put half of the cooked pasta into the prepared baking dish and top with about a third of the tomato sauce. Spread the ricotta mixture on the sauce in an even layer. Cover with the remaining pasta and then the remaining sauce. Top with the remaining 1/2 cup mozzarella and the remaining Parmesan. Drizzle with the remaining 1/2 tablespoon oil. Bake until bubbling, about 30 minutes. Let sit 10 minutes before cutting.

I actually made this for dinner tonight:

1 pound ground round
1 onion, diced
minced garlic, I use a couple tablespoons (prechopped in a jar)
dried parsley, about 3 tablespoons
onion powder, garlic powder
ziti, cooked, not rinsed
olive oil
1 bag shredded mozz
some parm and provolone if you want...my rule of thumb is buy one bag of italian blend and one of mozz and use them both.
1.5 to 2 jars sauce

Cook the noodles. Set aside.

Heat olive oil, add onions and garlic, saute 5 minutes, add meat and spices (salt and pepper if you want) cook, drain.

Mix everything into a large casserole and bake for 45 at 350.

Let sit 10 minutes before cooking, and bake it uncovered.

Someone suggested sour cream in this, do not do that!!!!
