Depends…
If I am having just the salad…or veggies (i.e. carrots)… ranch…
salad with a nice piece of steak… then balsamic vinaigrette
spaghetti and salad… italian
fettuccini alfredo and salad… cesar
but if I am in the mood I will make a bean, corn, olives, cotija cheese, bell peppers , salad with a citrus dressing… yummm!

a basic balsamic vinagarette because its so adaptable. Use one part good olive oil with one part vinegar. To this base you can add any or all of the following in proportions you enjoy:
- sundried tomatoes
- garlic
- onion or shallots
- basil and oregano
- salt and pepper
- red pepper flakes (sweet or hot)
- flaked cheese (blue or feta in particular taste wonderful)
- soy sauce and sesame for a more oriental flair
and it also makes a great marinade option
