I've eaten them, they are delicious, but never prepared myself.

Roasted New/ Fingerling Potatoes
This is a great side dish for bbqs, steak, roasted chicken, etc. I use the newer small potatoes and fresh herbs to brighten up the flavor.(If you use dried herbs reduce the amount to 2 tsp of each.)
2 lbs mixed red yellow purple baby new potatoes (or fingerling, or both mixed)
2 tablespoons olive oil
2 tablespoons fresh thyme
2 sprigs rosemary
sea salt, to taste
black pepper
4 servings

1. preheat oven to roast at 450°F.
2. in a casserole dish add potatoes, olive oil, fresh thyme, salt, pepper, and the leaves of 1 sprig of rosemary, crushed.
3. roast for 20 minutes, turn and roast 20 minutes more.
4. garnish with rosemary sprig.

Finger potatos can be one of two things. Fried or grilled.

I'll do grilled first because it's so much easier.

Cut the potato into finger shapes. Try to have each piece with some skin on the back.

Brush with olive oil and season with sea salt and fresh cracked pepper. Sprinkle thyme and some garlic powder

Grill till soft on the inside.


Now for the fried fingers.

Mash the potatos properly (Which means boiling them with skin on and then putting them into a ricer).

Add egg, salt and pepper to taste.

Roll into finger shapes

Refigerate

Put into a frying basket (gently)

Fry till slightly brown.

Remove, resalt

Refry.

Done.
