Beef enchilada casserole
You will need:
Pot roast
Taco seasoning
flour or corn tortillas
enchilada sauce
cheese
black beans
black olives
Shred the leftover pot roast sprinkle with taco seasoning warm in a sauce pan
in a casserole pan layer torn up tortillas dipped in enchilada sauce, cheese, black beans, black olives, and roast.
Make about 3 or 4 layers pour leftover sauce on top. place in oven at 425 degrees bake covered for around 30 minutes or until hot throughout. You may remove top and broil for 2 or 3 minutes to make cheese on top bubbly.

I always liked to boil some egg noodles in some beef broth, pull apart the roast and add it in the noodles for a quick meal. Or have an open face roast beef sandwich. Just toast a piece of bread, top with roast beef, mashed potatoes and gravy. Or you could pull the meat, simmer in BBQ sauce and have BBQ sandwiches. YUM!

I know it sounds weird but my mom used to make tacos with left over pot roast. They were one of my dad's favorite things. She would just dice the meat and warm it up. Then she would put it in the crispy corn tortilla shells and top with the usual taco toppings. She also made pot pie with leftover pot roast.

Pot pie, chop 2 small potatoes, 2 medium carrots, 1 small onion, 2 stalks celery, 1/2 cup corn, 1/2 cup of peas ( I use frozen peas & corn ), cut up meat in bite size pieces, add 1 can of mushroom soup, 1 evelope of brown gravy mix,Add any kind of spices you like. Mix all together put in pan & cook till potatoes & carrots are almost done. Make crust: 2cups flour, 1 tsp salt, 1 cup crisco all vegetable shortening, 1/2 cup of ice water ( very important ), roll out , use a 10" deep dish pan. Pour into crust, roll out the top crust, put on top of meat mixture, cut slots in crust, brush with milk, sprinkle creole spice on top, Bake 350 degrees for 1 hour. Enjoy. This is very tasty.

a good way for left over pt roast would be to slice it real thin and put it ina sautee pan with gravy, then serve it over white bread, it's great and the kids will love it
