The caunch (shell) is symbolic for the leadership and teamwork of the group. The story goes on and the shell grows paler as the different groups drift appart. When the shell is smashed (along with Piggy) it symbolisas the complete distruction of their working together.
Also, when one of the kids are killed by having rocks thrown at them, it is a religious symbol of how some guy (can't remember who) was killed in the same way.
My first essay on this book included the phrase (this is refering to Jesus who was stonned to death)

The pig head on the stick with the blood dripping and the flies swarming on it is a symbol of that main boy (can;t remeber his name) becoming God and being in charge. (Like Jesus' crucifixion) The fact that the blood was going into the ground and swarmed with flies represents that he was more an evil devil than a holy god.
